German Chocolate Macaroons

Umm yeah that’s right! I just made the best cake ever into a cookie!

I don’t mean to sound so one-note lately, but I can’t get macaroons off my mind. I drastically changed the classic coconut macaroon into a German chocolate creation. I made the standard batter, used almond meal instead of flour, stirred in dark chocolate chips, and topped them with a pecan before popping them into the oven. Ooey gooey goodness.

I’ve been doing a lot of sitting around and thinking lately…mostly because I’m on summer vacation right now…and I feel like it’s just about time to start taking my summer road trips. I’ll just pack up some cookies and jump in my car (sometime soon…).
