When I want a chocolate cookie, I want a bold chocolate cookie. I hate when a cookie is a deep, rich brown color but bland and crumbly! How decieving!
These? More like a brownie cookie. Really chocolatey…and a bold pop of peanut butter flavor! Yup, chocolate and peanut butter. Like Batman and Robin.
Oh, and no peanut butter is actually in the cookies. What? Yes, they’re chocolate peanut butter, without using gobs of peanut butter. How? Peanut flour*!
I’ve been using peanut flour in my everyday eats (yogurt, oats, shakes, etc) to add peanut taste without peanut fat. And it’s low in calories too!
Sp you can totally gobble up these cookies without a care in the world! The chocolate chips and peanut butter chips add pockets of melty, creamy goodness to these amazing cookies too, sending them over the top.
Can’t get much better than that!
I made these for my older brother. It’s his birthday today (Happy Birthday bro!). I always used to make his birthday cakes when we lived near each other. But, now that we live so far apart, I figured I’d send my chocoholic older bro some Flourless Chocolate Peanut Butter Cookies. He’ll love them!
*If you can’t find peanut flour in your natural foods store, you can order it from iHerb! I order mine from there, and if you enter the code QJT075 at checkout, you’ll get a discount 😉 I’m totally not a spokesperson for them, or compensated in any way, but I do like their service!
Flourless Chocolate Peanut Butter Cookies
(makes 1 dozen cookies)
1 cup powdered sugar
1/2 cup granulated Stevia
1/3 cup cocoa powder (I use unsweetened)
1/3 cup peanut flour (see ordering note above)
1/2 tsp. salt
2 tsp. vanilla extract
2 egg whites
1/4 cup semisweet chocolate chips
1/4 cup peanut butter chips
~Preheat your oven to 350 degrees F. Line your baking sheet with parchment.
~In a large bowl, combine the powdered sugar, Stevia, cocoa, peanut flour, and salt. Stir to combine, breaking up any lumps. Add the egg whites and vanilla. Stir and mash the ingredients until they come together (this takes a little bit of patience and careful mashing, because it looks like it’ll never come together…until it magically does!). Finally, add the chocolate chips and peanut butter chips! Stir until well incorporated.
~Drop tablespoon-sized mounds of dough onto the baking sheet, well spaced. Bake for 10 minutes.
~If you want to get decorative, like me, as soon as they come out of the oven, press a few more chips into the top of each cookie. Let the cookies cool on a wire rack before carefully peeling them away from the parchment paper. Enjoy with a glass of your favorite milk!
