Olive Tapanade Hummus Layer Dip and Tailgating with Sabra

I’ve paired up with Sabra to bring you a fun Tailgating spread, including lots of hummus and dip goodness! I’ve made a delicious Olive Tapanade Hummus Layer Dip for you and a fun bonus recipe for Cucumber Rosemary Sea Salt Hummus Rollups too! Now, even if football isn’t your thing, the table spread will get you psyched up for game day.

Hey all! So I don’t know what things are like around your house during the fall, but in our home, things revolve around the gameday schedules. College football and NFL are huge in my home because we love cheering on our college team and my husband is an avid “Fantasy” player. Serious stuff.

I’d have to admit, I’m not a huge fan of the games (ok, I can’t sit through a whole one without a project going on the side), but I am a huge fan of making a gameday spread! Need food? I’m your gal!

I’ve teamed up with Sabra, because they’re the official dip VIP to the NFL, to bring you some ultra fun and easy recipes for tailgating (at the games or at home), designed to maximize your dipping pleasure.

First of all, I’m a-okay with just laying out a bunch of tubs of different flavors of hummus, Greek yogurt dips, guacamole and salsa with some dippers (veggies and chips) and calling it a day. BUT today, I’ve whipped up not one but TWO super simple recipes for you to include on your tailgating table!

Sabra - Tailgating - Olive Tapanade Hummus Layer Dip 1

The first one is this Olive Tapanade Hummus Layer Dip which is SO darn good. Layers of cream cheese, chickpeas, a bit of crunchy onion, some fragrant spices, and one of my favorite flavors of Sabra hummus, Olive Tapanade, all layer up for a fun and quick dip. I love dipping sturdy tortilla chips or carrot sticks into this one, but put out a wide variety of veggies (the more the merrier) so everyone can find their favorite! This one is great room-temperature so it’s easier to dip.

The second is an embarrassingly easy Cucumber Rosemary Sea Salt Hummus Rollups recipe! I use a veggie peeler to make even strips of cucumber, dry them off, and spread them with the new Rosemary Sea-Salt Hummus, which just might be my all time favorite thing ever, then roll them up. The sea salt is perfect with the cucumbers (don’t you usually eat your cucumbers with a dash of salt?) and this is definitely one of those snacks that you and your man can pop down without any snacker’s guilt.

My tablescape here was super simple and fun to pull together. I used puffy paint to draw “yard line” lines on green felt rectangles. I also bought these adorable foam footballs that have adhesive on the back, perfect for decorating cups and plates! All of these goodies can be found at your local craft store.

To jazz up my table a touch more, I added a few extras. I add a bowl of peanuts because those are some of my favorite snacky foods, and I also heap chunks of feta into the Farmers Ranch Greek Yogurt Dip because I love the little something extra. PS if your family is a “Ranch only” family with your veggies, this Sabra Farmers Ranch will blow your mind. My husband ate almost the entire tub, and he doesn’t like “substitutes,” so that’s legit.

Olive Tapanade Hummus Layer Dip

This is such a simple, delicious layer dip for a fun game day! Cream cheese, chickpeas, crunchy onions and fragrant spices are layered and topped with Sabra Olive Tapanade Hummus. (makes one 8" square or round layer dip)

Ingredients
  1. 8 ounces of cream cheese, room temperature
  2. 3 Tbs. minced white onion
  3. ½ - ¾ cup chickpeas, rinsed and dried (from can)
  4. 2 tsp. Zataar *
  5. salt and pepper
  6. Sabra Olive Tapanade Hummus (10oz)
  7. Olive oil for drizzling
Instructions
  1. In an 8” skillet or glass baking dish, spread the cream cheese in an even layer. Next, sprinkle on the onion and the chickpeas. The chickpeas should create almost a complete layer on top of the cream cheese. Use your fingers to lightly press the chickpeas and onion into the cream cheese layer.
  2. Next, sprinkle on the Zataar spices and a sprinkle of both salt and pepper.
  3. Dollop the hummus** around the top (the whole container) and then use an offset spatula to carefully spread it into an even layer.
  4. Finally, add a drizzle of olive oil and a bit more Zataar if you wish.
  5. [**I reserved some of the olive tapanade from the top of the hummus to add to the top of my dip, but this isn’t necessary if you’d rather just stir it all in and spread it in one go.]
  6. Serve immediately with fresh cut veggies, pita chips or pretzels while room temperature. If you prepare the dip ahead of time, wrap the top with plastic wrap and refrigerate, being careful to remove it from the fridge 30 minutes before serving so the cream cheese layer can soften up.
Notes
  1. *Zataar is an amazingly fragrant spice mix containing cumin, oregano, sumac, sesame seeds and black pepper. You can find it in most spice shops (like Penzey’s, on Spiceologist’s website, etc) or mix your own. OR mix as many of the spices you do have to make your own spice mix.

Cucumber Rosemary Sea Salt Hummus Rollups

These are the most simple, delicious snacks for a healthy game day! Strips of cucumber are coated with Sabra Rosemary Sea Salt Hummus and rolled up. It's a refreshing and fun tailgating snack. (makes 8 portions)

Ingredients
  1. Sabra Rosemary Sea Salt Hummus (10oz), stirred
  2. 4 medium cucumbers, washed
Instructions
  1. Use a vegetable peeler to carefully peel even strips of cucumber. Lay out a couple layers of paper towels. I like to peel a few strips, rotate the cucumber and peel a few more, rotate again, and continue around the cucumber. I stop when I hit the seed-filled core making sure none of my strips have seeds. Lay each strip onto the paper towels, in a single layer. Once you’ve peeled the cucumber strips, use another paper towel to press on top of the cucumber strips, drying them on both sides.
  2. Next, spread 1-2 tsp. of the hummus on a strip of cucumber, spreading it in an even layer (stopping just before the end of the strip), then roll up the cucumber and place on your platter. Repeat with each cucumber strip. Serve and enjoy!
Notes
  1. *If you decide to use a mandolin, your strips will be slightly thicker which means you may need to use toothpicks to keep your rolls together. This is just fine as long as you have toothpicks ready.
