Super Healthy Cinnamon Raisin Granola

Have you noticed my granola kick lately? I just can’t get enough! It started with my Best Tropical Granola Ever, then came the Rich Chocolate Healthy Granola, and now we’ve come to my Super Healthy Cinnamon Raisin Granola! This one is the perfect granola because it goes well with everything! It is so yummy on it’s own in a bowl of almond milk, or on top or Greek yogurt, swirled with sugar-free raspberry jam…or jam of any flavor! Or drizzled with a bit of local honey.

Super Healthy Cinnamon Raisin Granola 

2 cups old fashioned oats
1/4 cup shredded unsweetened coconut
1/4 cup flax seed meal
3 Tbs. Splenda
1 tsp. cinnamon
1 tsp. vanilla extract
pinch of salt
1 Tbs. honey
1/3 cup unsweetened applesauce 
1/4 cup raisins (or craisins if you’re not a raisin fan)

~Preheat oven to 325 degrees F. Line a baking sheet with parchment and spray with non-stick spray.
~In a large bowl, combine all of the ingredients. Work them with a silicone spatula until all of the ingredients are well incorporated and moistened.
~Bake for 40-50 min, turning over the granola carefully with a spatula every 15-20 min. It’s done when it’s golden brown all over. Remove from oven and let cool. Enjoy!

    I’ve made this one often. Very good snack and along side yougart. I like it best adding pumpkin seeds and almonds cut in half.I like that you’re not adding sugar (just a bit of honey) or oil!
