It’s a Blookie?!

When I get word of being invited to a cook-out, immediately I wonder what dessert item I should bake! Today is my graduation day, and although I didn’t go and don’t have the degree yet (it’s in the mail, so they say), I’m in a celebratory mood. I also am in the mood for something that tastes warm but not too heavy and rich, so a blondie or brown-sugar cookie sounds perfect. I have decided to make…a blookie? I honestly don’t know what to call it simply because it’s a mix between a blondie and a cookie bar. Pressing the dough into the pan reminded me of making a cookie bar, but the light fluffy end product resembled a blondie. Packed full of chunks of white chocolate, milk chocolate, hazelnuts, and caramel, these blookies are bound to be the favorite at the cook-out!

“Blookies”
(Blondie-Cookie Bars)
[makes 16]
1 and 1/8 cup all purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 cup granulated sugar
1/3 plus 1/4 cup packed brown sugar
1/4 cup butter, room temperature
1 large egg
1 tsp vanilla extract
1/3 cup hazelnuts, toasted and roughly chopped
1/4 cup white chocolate chips
1/4 cup milk (or semisweet) chocolate chips
5 caramel squares, quartered (or chopped into small chunks)
~Preheat oven to 350 degrees F. Line a 9×9″ baking dish with foil and spray with non-stick spray.
~In a large bowl, use a hand mixer to cream butter with granulated and brown sugars until light and fluffy. Add egg and vanilla and beat until well combined. Add all dry ingredients and mix until incorporated. Fold in nuts, chocolates, and caramels.
~Press dough into the pan, forming an even layer.
~Bake 30 min or until golden brown and edges start shrinking away from pan. Let cool completely before using the foil to remove the blookies from the pan and cutting into 16 equal pieces. Enjoy! 


**Correction: the cook-out was cancelled, but don’t fret! All of the blookies got eaten!
