Blueberries and Cream Cold Oats

October 11, 2011 by Melissa

What’s for breakfast? I am going to start talking about this a bit more often. I always try to prepare a good breakfast, and there’s nothing I love more than the comfort and versatility of a bowl of oatmeal. To me, I look at oats as a plainly dressed Barbie doll and my pantry is filled with accessories to dress and jazz it up. I have an arsenal of oat recipes (hot, cold, steel cut, old fashioned, etc.) and we are going to start here: Blueberries and Cream Cold Oats.

Cold oatmeal is something I was recently introduced to by my close and dear friend, Jessi. She gave me a basic recipe that she has been using and manipulating, and I was eager to get into the game! I packed this cold bowl with warming flavors and lots of healthy ingredients (protein too!). The fun thing about this recipe, is that you make it up before you go to bed, and in the morning, your breakfast is ready for you!

Blueberries and Cream Cold Oats
1/4 c. unsweetened almond milk (or “milk” of your choice)
1/4 c. homemade nonfat Greek yogurt (or yogurt of your choice)
1/4 c. old fashioned rolled oats
1/4 c. blueberries (I use frozen but you can use fresh)
 1/2 tsp. cinnamon
optional: 1/2 packet of Splenda or Stevia (or sweetener of your choice)
~mix all ingredients together in a bowl, cover with plastic wrap, and let sit in fridge for a few hours or overnight. Enjoy!
Nutrition: One bowl of my Blueberries and Cream Cold Oats is only 129 calories! And it has approximately 7g of protein! Yum

A note about eating breakfast, for me. As part of my lifestyle, I exercise in the mornings. So, when I get up I eat a small snack, then I head to the gym. After the gym, I come home and dig into my breakfast! Breakfast keeps me motivated to finish up strong at the gym then hurry home! Not to mention that tall hot cup of French pressed coffee too. I tend to carry this eating style throughout my day, eating small meals every couple hours. If you follow a diet, though, where you are satisfied with 3 meals a day, you’ll want to increase your portion of this oatmeal recipe to 1/3 c of everything.

Strike up a conversation:
What is your favorite oat “accessory”?
