Pumpkin Pie Greek Yogurt Parfait

In case you haven’t noticed, tis the season for everything pumpkin. It’s hard to ignore the beautiful fall weather and abundance of apples, squash, and pumpkins in the grocery stores. I absolutely love it. Like many of you, this is my favorite time of the year. And to celebrate it all, I have a very simple, very healthy way to incorporate a bit of pumpkin into your everyday eating (and to use up some of that wonderful homemade yogurt you have in your fridge…right?):

Pumpkin Pie Greek Yogurt Parfait
1/2 c. nonfat Greek yogurt, divided
1/4 c. cooked pumpkin (no shame, I use canned)
your favorite pumpkin pie spices 
*optional: a small red apple, diced; or chopped pecans; or dried cranberries
~layer 1: 1/4 cup of yogurt. Sprinkle on top the spices. I use ground cinnamon, nutmeg, and allspice!
~layer 2: 1/4 cup pumpkin. Sprinkle another layer of spices. 
~layer 3: remaining 1/4 cup Greek yogurt. Top with a little sprinkle of cinnamon.
Note: If you’re like me and you like to have a bit of crunch or varied texture to your yogurt, then you’ll love this parfait even more after you stir in some chunks of fall apple! Another option is to add toasted pecans or dried cranberries. Each of these options add a bit more fall flavor to an already delish-nutrish dish! 

My parfait (minus add-ins) boasts a lean mean 73 calories and 12 grams of protein! This is the perfect little side-dish for your lunch or a slimmed down and easy dessert or snack!

Want a unique trick to add tons of sugar-free, calorie-free flavor to your dishes? And I’m not just talking spices! Use your coffee syrups for more flavor! I buy bottles of sugar-free Torani syrups to add a punch of flavor to my coffee, yet the flavors are great for more than just that. For example, I have a syrup that is “brown sugar cinnamon.” It has a warm, melted brown sugar taste that adds perfect flavor without all the calories. I topped my parfait with a small drizzle of this syrup and it punched up the flavor to a whole new level! I have many flavors (pumpkin pie, peanut butter, chocolate, salted caramel, coconut, etc.) and they totally change the way I flavor everything, from coffee to oatmeal.
