Hint of Chocolate, Pumpkin Muffin

I know a lot of you are probably overloaded with pumpkin recipes, but just in case you aren’t, here’s a vegan single-serving muffin that will make your day! Pumpkin and chocolate were meant to be together, so I couldn’t help but mix the two in this lovely muffin. 

Hint of Chocolate, Pumpkin Muffin, for one

2 Tbs. whole wheat flour + 1 Tbs. white flour
1/4 tsp. baking powder
pinch of salt
1 Tbs. unsweetened soy yogurt
1 Tbs. pumpkin (canned, have no shame)
1 Tbs. unsweetened almond milk
1 tsp. Artisana Cacao Bliss (you can swap for a nut butter, but why??)
1/2 tsp. vanilla extract
1 tsp. sweetener (I use Splenda) 
optional 1-2 tsp. mini chocolate chips

~Preheat oven to 375 degrees F. Prepare a small ramekin (or muffin tin) with a muffin liner
~In a small bowl, mix together yogurt, milk, pumpkin, and Cacao Bliss. If your Cacao Bliss is too solid to mix, then microwave all the ingredients for about 20 seconds, then mix together. Add vanilla and sweetener. Then add all dry ingredients. Fold in chocolate chips if you decide to use them (I didn’t but I wish I had). Bake for about 20 min or until your test stick comes out clean. Enjoy with your favorite pumpkin butter or more Cacao Bliss! mmm…
