Spring Green Pistachio Cookies

Remember my Malted Vanilla Pudding Cookies? Well, they turned out so tasty and were so simple that I decided to experiment with another flavor: pistachio. The result was a cake-like fluffy cookie, full of pistachio flavor and crunch! Mmm… Plus, I used the fat-free sugar-free pudding mix again, so no guilt. They have a fun light green color, too, which will come in handy this St. Patrick’s day!

Spring Green Pistachio Cookies

(makes appx. 24 cookies)
1/4 cup butter Crisco (or butter substitute of your choice)
1/4 cup brown sugar
1/4 cup unsweetened applesauce
1 package sugar-free fat-free pistachio pudding (1 oz pack)
1 egg white
1 tsp. vanilla extract
1/2 tsp. baking soda
1 cup flour
dash of salt
1/4 cup toasted pistachios, chopped 
~Preheat oven to 350 degrees F.
~Cream the butter and brown sugar until fully incorporated (2-3 min). Add applesauce and pudding powder and continue to mix. When that is completely mixed, add the egg white and vanilla. Mix. Then add your dry ingredients until it comes together like a dough. Fold in your pistachios. 
~Use a teaspoon to drop even sized cookie dough balls on your baking sheet (you’ll want to use 2 baking sheets). Bake for approximately 12-15 min. Flatten them with the back of your spatula as soon as they come out of the oven. Let cool, and enjoy! They will maintain a soft texture. Yum.
