Iced Mint Lattes

My Iced Mint Lattes are a super simple but crazy delicious homemade treat. You’ll be able to quit that afternoon drive-through habit in no time once you start making these! With only a handful of ingredients (pssst I’m using coconut sugar!), these Iced Mint Lattes are much healthier and still just as delicious as your coffee shop favorite.

I didn’t realize until quite a handful of days into April that it is Earth Month. And this only occurred to me because I had decided to really be more mindful of the amount of trash I acquire and produce. Of course, this was after a YouTube binge from a Facebook rabbit hole of videos on living your life without producing trash.

Careful, you’ll feel like the worst person ever after watching that for hours.

Anyways. I pulled out my trusty padded cooler, loaded it up with hot and cold drink cups, straws, bulk bags, etc. and put it in my car. And I made a vow to only get a coffee drink out if I use my own cup! AND on top of that, I vowed to continue to try to make my drinks at home.

Well that works wonders. Here’s why: when you’re a mom, the drive-through at Starbucks is sanctuary. And if you can’t hit the drive-through (ie you have to walk in to get your drink to use your cup) you might as well just go straight home. So I’ve had Starbucks like twice this month. Winning.

So, what have I been drinking at home? Iced Mint Lattes. They’re my favorite and they taste good enough to let me skip the drive-through.

My Iced Mint Lattes are super simple. You can use espresso shots at home (any way you want to brew them), cold brew, or even cold coffee from a jug you buy at the store (which is still cheaper than buying individual drinks out). You can also use any milk you love, so that’s just perfect!

My Mint Syrup is just two ingredients (three if you count water): coconut sugar and fresh mint leaves. It boils down into a caramel-colored, freshly minty syrup! Perfect for coffee or tea. I love it so much and make a batch every weekend!

Iced Mint Lattes
Recipe by Melissa @ Treats With a Twist
Makes 1/2 cup mint syrup for lattes

INGREDIENTS
For the Mint Syrup:
1 cup fresh mint leaves
½ cup coconut sugar
For an Iced Latte:
½ cup cold brew or 2 espresso shots
½ cup milk of choice (I like almond milk or coconut milk)

In a small saucepan, combine ½ cup coconut sugar and ½ cup cold filtered water. Bring to a simmer, add the mint leaves, and quickly whisk together for 2 minutes or until the sugar has dissolved (this is pretty quick). Turn off the heat and let the syrup come to room temperature.
After the syrup is at room temperature, strain out the mint leaves and put the syrup in the fridge (I like to use a pourable jar to keep it in).

Make your lattes: In a glass, pour in 2 Tbs. of mint syrup, your cold brew or espresso (cooled down) and your milk. Stir together, add ice. Enjoy!
