Coconut Macaroons

Do you know what I absolutely do not understand? The concept that baffles me?? How, exactly, people can hate coconut! And there’s so many of them! I have trouble listing any of my friends that love coconut and I don’t get it! Did you have a terrible childhood? Did you never turn out your pockets and find a melted Almond Joy? No Pina Colada? No Mocha Coconut Frappuccino?? No love? That’s right, it absolutely baffles me.
I believe that there can never be enough coconut around (in fact, I bought a pineapple at the store yesterday, which made me run over and pick up a pack of coconut too just because it made me think of it!).  Today, I am making coconut macaroons. First off, if there’s any recipe that only calls for egg whites, it definitely jumps into the “my favorites” list. Secondly…well did I mention that coconut and I have been having a life-long love affair?

Also, this whole recipe can be made in one pan, using no measuring spoons (only cups), and then goes straight to the pan to bake (minimal dishes!).

Coconut Macaroons 
(Haystacks From Heaven) 
4 egg whites
appx 1 tbs honey
appx 1/4 tsp salt
1/4 cup flour
3/4 cup sugar
1/2 cup Splenda
2.5 cup shredded coconut 
~Preheat oven to 350 and prep pans with silicone mats or parchment paper
~Put all ingredients in a pot, turn the heat onto med-low and stir until all incorporated and “reduced” so there’s not much residual liquid left in the pot. Take off heat and stir to cool down. Spoon onto baking mat (won’t expand so put them relatively close together) and toss into the oven…bake 20 min until golden on top. If you put both pans in at once (recipe makes appx two pans of cookies) then flip-flop them at the 10 min mark! 
~And because I’m just that cool, I chose to dip mine in some melted dark chocolate. Zap 3-4oz of dark chocolate in the microwave and dip cooled cookies in chocolate. Refrigerate to solidify. Eat! Quickly! (Know what would be super yum too? If you stuck a toasted almond in the top of each cookie, so they’re kind of like an exposed Almond Joy!!) 
Holy Crud! I just whipped out these cookies and then glanced out my window…it’s pitch black outside! And there’s a “softball-size” hail warning on the TV! Oh goodness what a happy cookie for a gloomy day!

    Just because I don’t like REAL coconut doesn’t mean that I don’t like the fake stuff lol. Or, get this, I LOVE CURRY. And coconut is alllllll in the yellow curries. But as long as I can’t taste any of the coconut, it’s fine. It’s the only time I keep coconut milk in my pantry.
