Banana Cheesecake Pancakes

Good morning! Ah, yes, some will argue that there is no better way to start your day than with a stack of pancakes. I beg to differ…because why would you start your morning with pancakes when you can start your morning with cheesecake pancakes?!

I was inspired to make these while reminiscing over an episode of Nigella. I absolutely love her, because she makes everything, from peas to milk and every mundane thing in between, sound absolutely sinful and sexy. If you know what I’m talking about, please indulge me with your favorite Nigella moment. Anyways, she made a breakfast pancake using cottage cheese in an episode, and this has always stuck in my mind. With a mixture of this episode and the the tune “Banana Pancakes” by Jack Johnson swirling around in my head, I set out to make the healthiest morning treat (or dessert!) you’ll ever make.

Banana Cheesecake Pancakes 
(makes 8 silver-dollar cakes)
2 egg whites
1/2 cup low fat cottage cheese (I use 1%)
1/2 overripe banana, smashed*
1/2 Tbs Splenda (or sweetener of your choice)
1/2 tsp baking powder
1/8 cup + 1Tbs  whole wheat flour 
1/2 tsp vanilla (I used 4 or 5 drops of liquid vanilla stevia instead)
~Beat the egg whites by hand until frothy (you don’t need to get anywhere near the peaks-stage)
~In a separate bowl, mix together all other ingredients. Fold the egg whites into the mixture. Spoon onto hot griddle and cook as you cook pancakes. These may feel to you like they aren’t done in the middle, but that’s because the cheese gets a bit melty and the banana keeps it moist, so don’t panic! It’s all alright! 
*I keep a ton of bananas in my freezer so I can be ready for banana bread at a moment’s notice. For this recipe, I just took one out of the freezer, cut it in half with a knife, popped it in the microwave for about 45 seconds, then squeezed it out of the peel and mashed it up!

These pancakes are perfect for two, but if you want to gobble them up while your honey is still sleeping, don’t panic and feel guilty, because the whole recipe is only 245 calories! And it is packed with protein! So, calm down, and start the recipe all over again before he/she wakes up!

I filled up jars with candy corn…and a candle! Happy Fall!
