Cherry Vanilla Cold Oats

First of all: Congratulations vegAnn because you won a bunch of WholeSoy coupons! I can’t wait to hear which flavors you buy and how you use them! Now, for today’s post (hey, you can use your yogurt for this!):

I feel like cherry is a very tricky flavor. You either love cherry because you grew up knowing that cherry is the flavor of the red popsicle, or you love cherry because you ate real cherries as a child. No, they aren’t the same thing. I went through a period where cherries were not my favorite fruit, because it was hard to cope with the fact that no cherry tastes like a cherry popsicle. Now that I’m older, though, I’m back to loving cherries (hence my cherry bran muffins).

Now, to mix my new-found love of cherries with my already-established love of oatmeal! Here’s another wonderful way to enjoy your morning cold oatmeal (remember, prepare this the night before!):
Swimming with cherries!

Cherry Vanilla Cold Oats

1/4 cup old fashioned oats
1/4 cup unsweetened almond milk
1/2 cup water
1/4 cup plain Greek yogurt
1/4 cup cherries (I use frozen cherries, sliced in quarters)
splash of vanilla extract
sprinkle of cinnamon
optional: 1/2 packet of Splenda (or sweetener of your choice)
~Microwave oats, milk, and 1/4 c. water for 2 min (the oats will be only partially cooked this way). Remove from microwave and stir in remaining 1/4 c. water, cherries, cinnamon, vanilla, and Splenda. Put in the fridge overnight. Pull out of fridge in the morning and enjoy! The oats will have absorbed the rest of the liquid and be super fluffy!

    Hi! I am an Arkansas native 🙂 found your link from Enlightened Cooking. Have you tried Muesli… no need to microwave – just mix rolled oats, any nuts or seeds, and any dried fruit (I usually add golden raisins, dried blueberries, pumpkin seeds, sunflower seeds and walnuts). Maybe 2 cups of oats to 1 cup of add ins, maybe more. Put a serving size in a bowl, add milk (don’t completely cover, but get everything wet). Overnight in fridge. My boyfriend eats this every morning and its delicious!

    Oh if you are vegan, it works with almond milk too!

    Thanks for the tip Nikki! I can hardly wait to try it (I’ll try just about anything someone tells me is good). I’m not vegan, I just do a lot of swap baking, but yes I use almond milk. Sounds so yummy. Thank you again for the tip. Go Hogs 🙂
