Sweet Potato Muffin Roll, for one

Look at those orange specks!  

Sometimes we just have an over-abundance of sweet potatoes in the fall… I was gifted a large bag of sweet potatoes by the kindest guest in the bakery (anybody who brings me gifts is a-okay by me). She said that her garden had been overflowing with them and she wanted to know what to do with them, besides eat them straight. I baked them up a few at a time to keep in the fridge and eat with my dinners, but I knew I just had to think of a healthy, easy recipe to bake with them. I didn’t want to do the typical pie or muffin, so a more savory and dense dinner roll (that can also be considered a savory muffin…like a quick-bread) came to mind. Plus, now you can enjoy your sweet potatoes alongside your sweet potatoes that you’re already eating for dinner (now how’s that for a vitamin overload?).

Sweet Potato Muffin Roll, for one

2 Tbs. whole wheat flour + 1 Tbs white flour
1/4 tsp. baking powder
pinch of salt
1 Tbs. unsweetened plain soy yogurt (I used WholeSoy, but you can use whatever you like best!)
1 Tbs. cooked sweet potato (I bake mine, but boiled works well…just whatever you have leftover)
1 Tbs. unsweetened almond milk (or your milk of choice)
1 tsp. Artisana Pecan Butter (I love the combo of pecans and sweet potato, but you can sub almond butter or peanut butter)*
1 tsp. sweetener (Splenda is my go-to)
1/4 tsp. cinnamon

~Preheat oven to 375 degrees F. Prepare a baking ramekin (I put a muffin liner in mine, but if you want a dinner roll, then omit this)
~Put all of your wet ingredients plus sweetener and cinnamon in your blender (or Bullet if you’re in my kitchen) and pulse until smooth and well incorporated. Add your dry ingredients and blend until just mixed. Scoop batter into prepared ramekin (or muffin tin) and bake for 20 min or until tester toothpick comes out clean.
~When eating this with dinner, slather on a bit more Pecan Butter! mmm…

Artisana Product Review:
*I literally squealed with joy when I came home to a package by my door, with a return address from Artisana. I only just recently discovered the company while shopping at Ozark Natural Foods, and I splurged on a jar of coconut oil. I never do this, mind you. I don’t often splurge on expensive cooking items, but I just knew I had to try this. It has changed my life. I used the coconut oil in my chocolate chunk muffin last week, but I also like to slather it on my hands for a moisture surge and rub it on my lips for a soothing treatment. It is amazing, and it smells like heaven. I even have been popping popcorn in it! When I received a package from Artisana, I was jumping for joy to see an array of nut butters and the glorious cacao bliss! I couldn’t be happier to be experimenting with these products, and sometimes, just open the jars to smell the beautiful aroma within them. Mmmm…more recipes using Artisana to come!
