Breakfast Berry Quinoa

Good morning! Need an idea for breakfast? Give another grain a try! Trust me, you won’t be disappointed.

Breakfast Berry Quinoa
1/4 cup quinoa
3/4 cup cooking liquid (Here, you want to choose a milk or milk substitute to get that creamy warm breakfast feel. I used SoDelicious unsweetened coconut milk.)
1-2 tsp. sweetener (Use as much as you like depending on how sweet you like your breakfast. I used Splenda)
1/2 tsp. cinnamon
1/2 tsp. vanilla extract
1/4 cup berries* (I used raspberries!)

~In a small sauce pan, start heating the milk. Add the sweetener. As soon as it starts to boil, stir in your quinoa, put a lid on it and set it off the heat. Wait 10 min for the quinoa to absorb the milk (there will be liquid left over). Pour into your bowl and add your berries and spices!

*Here’s where you can get creative! Try blueberries or strawberries or even banana slices. Add a dash of nutmeg and some nuts or seeds (like what I have surrounding the bowl) if that sounds yummy too! This is a hearty, healthy porridge alternative to your morning oats, so treat it in a similar seasoning manner 🙂
Another Serving Suggestion: Make your quinoa the night before and put it in the fridge. It will absorb the rest of the milk in the fridge overnight. Now, either eat it cold, pouring more milk over the top like a cold-oats-meets-cereal hybrid OR reheat it in the microwave with some more milk and eat it hot! Making it the night before is a great alternative for busy morning people. Also, if you want to make a lot more at once, you can portion it out over several mornings for breakfast!

    Yummm! I love quinoa! Yours sounds great. 🙂
    My favorite way of all time:

    1/2 a banana
    1/4 cup quinoa
    1/3 cup almond milk
    1/3 cup water
    1/2 tsp vanilla extract
    2 tsp sesame seeds (optional)

    1. Rinse the quinoa.
    2. Add water, almond milk, and vanilla to a pot. Slice the banana into really thin slices and add to a pot. Bring to a boil, and while it boils use a wire whisk to whip the banana into the liquid. (idea from http://www.katheats.com/kaths-tribute-to-oatmeal)
    3. Add quinoa, turn down to medium, and simmer 20 min.
    4. Pour into your bowl and add sesame seeds(optional).

    The banana makes this SOOO creamy and sweet and you can’t taste the nuttiness of quinoa! It’s one of m all time favorites!
