The Best Tropical Granola Ever

This granola is so good! I literally cannot stop eating it. I had to remind myself to stop and photograph it before it was all gone. I have been on a pretty big granola kick lately because I am trying to go only-oats in the “cereal” department to prevent myself from overloading on sugary carbs (but they’re so good!). Even though granolas are primarily oats, you have to be careful because they can also be so high in sugar that they have more calories than your evening dessert! So, the only sugar calories in my recipe is from a hint of honey (which can be swapped for agave, liquid sweetener, or even 1 Tbs of Splenda Brown Sugar). All the dried fruits you could ever desire can be found in grocery stores or even the bulk section of natural food stores!

Tropical Granola

2 cups old fashioned oats
1/4 cup unsweetened coconut flakes (I love the large shavings)
1/2 tsp. cinnamon
2 Tbs. Splenda 
1 Tbs. honey (or agave)
1 tsp. vanilla extract
1/3 cup unsweetened applesauce
2 Tbs. dried currants
2 and 1/2 sticks of unsweetened dried papaya, chopped (chops up to about 3 Tbs-1/4 cup)

~Preheat oven to 325 degrees F. Line a baking sheet with parchment and spray with non-stick spray.
~In a large bowl, combine oats, coconut, cinnamon and Splenda. Add the honey, vanilla and applesauce and stir until everything is moistened. Pour your ingredients onto your baking sheet and make sure it makes an even layer, but you don’t want it all spaced out (because you want yummy granola clusters!). Bake for 15 min, then use a spatula to flip the granola in sections, then bake for 15-25 min longer until the granola is golden brown and crisp. Pour into a large bowl and stir in the dried fruits. Let cool before transferring to a storage container (or straight into your Greek yogurt or cereal bowl!). Enjoy!
