Birthday Cake Cupcake, for one

Today’s recipe builds on a previous post: Birthday Cake Crumb. Here’s where you can start to see the versatility of our previous recipe. This Birthday Cake Cupcake is so adorable and it’s flecked with multi-colored sprinkles, just like Funfetti! Yay! And, if it makes you feel better, because I didn’t frost it, you can call it a muffin (I won’t correct you)! But please feel free to top it with your favorite frosting, and of course, more sprinkles.

Birthday Cake Cupcake, for one
(makes one fabulous cupcake…or muffin)
3 Tbs. flour (I used 2 Tbs. unbleached white flour + 1 Tbs. wheat flour)
1/4 tsp. baking powder
1 tsp. sweetener (I use Splenda)
2 Tbs. unsweetened almond milk
1 Tbs. non-fat plain Greek yogurt (or soy yogurt)
1/2 tsp. canola oil
1/4 tsp. clear vanilla extract
1/2 tsp. multi-colored sprinkles
1 and 1/2 Tbs. Birthday Cake Crumb

~Preheat oven to 375 degrees F. Spray a small ramekin with non-stick spray (or prepare with a cupcake liner)
~Mix all ingredients in a small bowl, carefully folding in the crumb last. Transfer batter to the baking ramekin. Bake for 20-25 min or until test stick comes out clean. Enjoy!

    Cupcakes for birthday! I think it to be a quite innovative idea. May be, I’ll think of baking one if I’m gonna celebrate my birthday with only myself! 😀

    Sprinkle cake was always my fave, from a box with the vanilla frosting that had multi coloured chips in it. Or sprinkle angelfood cake, with whipping cream icing topped with sprinkles!

    Your recipe calls for ‘Birthday Cake Crumb’, but when I click on the links (there are two) both of them go to your homepage and not the ‘Birthday Cake Crumb’ page. I tried doing a search, but it was not on the first page.

    I already had to hunt through your site to find this recipe, since you posted a link to it (that also went only to your homepage) on another site (http://kitchenhealssoul.blogspot.com/2012/01/homemade-momofuku-milk-bar-birthday.html) and did not want to hunt through it again.
