Fig and Currant Oat Bars

Ready to kick off the new year with a healthy snack? Yes!
These oat bars are super simple and packed with healthy ingredients. They would make a terrific snack or a great healthy cookie alternative, and would be tasty with a bit of your favorite nut butter if you’re feeling indulgent.

Fig and Currant Oat Bars

(makes 16 bars)
2 cups old fashioned oats
1/4 cup wheat flour
1/4 cup wheat bran
1/4 cup brown sugar
1/4 cup Splenda
1/4 cup apple sauce
1/4 cup unsweetened almond milk 
2 egg whites 
1/2 tsp. cinnamon
1/2 tsp. vanilla
1/4 cup dried currants
1/2 cup dried figs, stems removed, diced

~Preheat oven to 350 degrees F. Line a 9×9″ baking pan with parchment and spray with non-stick spray.
~Combine all ingredients using a fork or a spatula until well mixed. Transfer to your baking pan and use a spatula to press the oat mixture evenly into the pan. Bake 20-25 min. Let cool completely, remove from pan (use the over-hanging parchment to help take the bars out of the pan) and cut into squares. Enjoy!
