Oat Cookie Pizza

Have you ever wanted to make a fast, fun, and healthy treat for a small group? I have the solution! Cookie pizzas have been popular for a long time, but they taste overly sweet and are full of butter and oil (they give your fingers that glossy sheen as you eat your piece). Here’s my oatmeal chocolate chip version, that you can decorate or leave naked (how scandalous!). If you like a thicker cookie (mine is pretty thin) then double the recipe and increase the baking time a bit, but use the same size pan (I prepared mine in a springform pan, and it is thin enough to bake up on the bottom of the pan, not needing the ring surrounding it).

Oat Cookie Pizza
(makes one 9″ round cookie)
1 cup old fashioned oats
1/4 cup wheat flour
pinch of salt
1/2 tsp. baking powder
1/4 tsp. cinnamon
1/4 cup Splenda (or sweetener of your choice)
1 Tbs. brown sugar
1/4 cup applesauce
1 Tbs. canola oil (optional: if you omit, your cookie will be chewier)
1 egg white 
1/2 tsp. vanilla extract
2 Tbs. semisweet mini chocolate chips
~Preheat oven to 375 degrees F. Spray the bottom of your springform pan with nonstick spray.
~In a large bowl, combine all dry ingredients and stir until well combined. Add all of the wet ingredients and combine until your dough comes together. Stir in the chocolate chips. Carefully spread onto the bottom of the springform pan in an even layer (I use a dampened silicone spatula to smooth out the dough until it is an even layer). Bake for 15-20 min, keeping an eye on it, until it is golden. Let cool before decorating and cutting!

Mini chocolate chips give you more chocolate in every slice!
