Vegan Rich Chocolate “Milk” Shake

March 27, 2012 by Melissa

Holy smokes it’s 80 degrees outside already! With weather like this, I’m definitely in need of a milkshake that won’t make me cry when I calculate the calories. Plus, because I prefer dairy-free treats, I know I have to concoct it myself (there are very few ice cream shops out there that use dairy free milk). This recipe is super quick, very healthy, and is perfectly portioned for an afternoon treat!

To make it easy on myself for treats to come, I have an ice cube try in the freezer dedicated to almond milk ice cubes. I fill up the tray with unsweetened almond milk (I like Silk unsweetened vanilla almond milk), freeze it, and use 6 cubes at a time per “milk” shake. Just don’t forget to refill it after you use the cubes!

Vegan Rich Chocolate “Milk” Shake

½ cup frozen unsweetened almond milk (6 cubes)
¾ cup unsweetened almond milk (straight from the fridge)
1 Tbs. + 1 tsp. unsweetened cocoa powder (I use Scharffen Berger)
1 Tbs. Splenda (or Stevia)
½ tsp. vanilla extract
~Place all ingredients in your blender (I use the Bullet!), and blend well until smooth. Enjoy!
Strike up a conversation: What are you doing to enjoy this amazing weather outside?
