Funfetti Cake Batter Popcorn

We need to talk. Have you seen this? I know you did. And I know you jumped straight into your kitchen to make it. And I know that you followed the recipe. Didn’t you? Here’s the problem: I’ve figured out how to reduce the calories in it. If you had just come to me in the first place, you wouldn’t feel as guilty as you do. All better? Now follow my recipe and stop crying.

 All kidding aside, there are tons of adorable and easy recipes out there for cake batter lovers. The problem is, they are loaded with calories. Now, I’m not saying that mine is good for you, because it still uses cake mix and white chocolate, but the reduced amount of glaze on the popcorn really helps cut the calories. It is such an easy recipe and will impress all of your friends on a movie night, especially when you wish you had time to make a cake, but you don’t. Check out the original recipe, do the comparison, and cut the guilt with this one!

Funfetti Cake Batter Popcorn
(inspired by Birthday Cake Batter Popcorn)
1/4 cup popcorn kernels
2 oz. white chocolate or almond bark (one large square)
1 tsp. coconut oil
1/4 cup sugar-free vanilla cake mix (dry)
1-2 tsp. colored sprinkles

~In your air popper, pop the kernels into a large bowl.
~In a small microwave-safe bowl, combine the white chocolate and coconut oil. Microwave for 25 seconds, stir, then microwave for 25 more seconds (microwave 10-15 more seconds if it’s not melted yet). Stir the white chocolate; it should be silky smooth. Drizzle it directly over the popcorn in the bowl. Sprinkle on the cake mix and the sprinkles, and use a silicone spatula to stir the glaze and popcorn together.
~Turn the popcorn onto a piece of parchment and spread it out and let it set (about 30 min)…trust me, this is the hardest part! Put the popcorn into a bowl, share, and enjoy!

Strike up a conversation: I feel like some people either love or they hate “cake batter” treats. Which team are you on? By the way, I must warn you, this recipe is so good, you’ll become addicted to it. I’m already a popcorn addict (remember this recipe?), but I made this recipe a few days ago, and haven’t been able to stop thinking about it since! It’s torture!!
