Quinoa Goji Oat Cookies

I’ve been obsessed with trying to incorporate as many good foods (primarily “superfoods”) into my meals and my desserts to. Here’s my solution to a spiced nutty cookie that is packed with nothing but goodness. Quinoa? Check. Oats? Check. Goji berries? Check. No fat? Super check!!
I must warn you, the dough to this is amazing! It’s nutty and full of warm spices and a bright zing from the goji berries. Wait, why would I warn you? It doesn’t have any butter or raw egg…ok go ahead, eat the dough, but save some for the cookies! I’ll make a cookie dough dip out of it soon so you can eat them both! 
Vegan Quinoa Goji Oat Cookies
(makes 14 cookies)
¼ cup golden raisins
½ Tbs. water
¼ cup applesauce
¼ cup Splenda
¼ cup brown sugar
1 cup oat flour*
¼ cup old fashioned oats
½ cup prepared white quinoa (cooked, drained, cooled)**
½ tsp. baking powder
¼ tsp. cinnamon
1/8 tsp. allspice
1/8 tsp. nutmeg
3 Tbs. dried goji fruit***
*I pulse oats in the food processor until they become a fine flour. You can also usually find oat flour in the bulk section of natural food stores, but why not make your own?
**I make a huge batch of quinoa every weekend and keep it in the fridge to use throughout the week. This makes it really easy to incorporate it into recipes like this one!
***I get mine from Navitas Naturals and they can be found at Whole Foods too!
~Preheat oven to 325 degrees F. Line 2 baking sheets with parchment or silicone mats.
~In the food processor, blend the raisins and the ½ Tbs water until pureed. Put this puree into a mixing bowl. Add all of the ingredients and stir well until the dough comes together (it will be pretty sticky). Use a cookie scoop to scoop even amounts of dough onto the cookie sheets. Flatten the dough with your fingers. Bake for 15 min or until golden brown. Enjoy!
