Almond Joy Popcorn

Remember my love of Almond Joy candy bars? Well it’s peeking it’s little head again and attacking my popcorn bowl! It’s ok, I’ll surrender. 
Don’t these look like a tasty combo?
Although this may seem like an indulgent treat, you could make an argument for the health benefits of air popped popcorn, dark chocolate, toasted almonds, and unsweetened coconut…so why not mix them all together? Sounds great to me!
Almond Joy Popcorn Mix
¼ cup popcorn kernels
1 block (25 grams) Scharffen Berger 70% chocolate
¼ cup almonds, toasted, chopped
3 Tbs. unsweetened coconut flakes, toasted
sea salt or coarse kosher salt
~Pop the kernels in an air popper. Spread the popcorn on a piece of parchment on the counter. Sprinkle on the almonds and the coconut flakes. Melt the chocolate in the microwave (at reduced power, microwave for 20 second intervals, stirring, until melted) and then drizzle over the top of the popcorn mixture. Finally, sprinkle the top with a bit of sea salt or kosher salt. Now here’s the hard part: let it set (this could take up to 2 hours). Put it in a giant bowl to share (wait, maybe this is the hard part)!

    Oh my yumminess. I saw this on Pinterest and had to check it out and then comment even though this is the first time I’ve been to your site. I love Almond Joys. The idea of putting the same flavors on popcorn never occurred to me. I have to try this next time I make a fun popcorn. Right now, I’ve just been using the microwave for popping corn but I would love to get one of those cool poppers like what the movie theater uses. They look like so much fun.

Those movie theater poppers are very cool, and I wish I had the space for something like that, too. But, I love my air popper because it makes healthy, oil-free popcorn that’s perfect every time! I couldn’t ask for more 🙂
