Gluten-Free Cupcakes and Foodie Pen Pals

I am so excited to tell you about this program I have become a part of. It’s pen pals for the foodies and food bloggers! Yup, just like when you were in the third grade, but this one is actually fun (maybe yours was fun then, but mine was lame). Hosted by The Lean Green Bean, it’s really fun because you get paired with someone who sends you something, and someone different to send things to. You have a $15 product spending limit and can make homemade gifts too, as long as you’re respectful of your pal’s dietary needs (I requested gluten-free options). This was my first month participating and I loved it. Here’s what I received from my foodie pen pal, Renee, from New York City:

She sent me so many fun things that I haven’t had before or that I could use in my baking for Treats With a Twist, which was so thoughtful and exciting. I gobbled up the KIND bar as a snack during work one day and drank the protein after a nice workout! She included a list of things to do with Chia seeds which was a fun jog for my brain. Also, she tucked in a bottle of Pancake Syrup from close by her home because maple syrup has become such a popular alternative sweetener lately! Fun!

With the gluten-free cake mix, I knew I wanted to do something unique, so I used it for baking individual cupcakes, so I wouldn’t have to use the whole bag at once! Here’s two quick and easy ways to use gluten-free vanilla cake mix: 

Individual Gluten-Free Vanilla Cupcake
2 Tbs. + 1 tsp. Gluten Free Vanilla Cake Mix
1 Tbs. Sprite Zero
~Mix the ingredients together and pour into a non-stick-sprayed cupcake liner (I tuck my liner into a small ramekin to use instead of a whole cupcake pan). Bake at 325 degrees F for appx 22 min, or until a test stick comes out clean.
Individual Gluten-Free Strawberry Cupcake
2 Tbs. + 1 tsp. Gluten Free Vanilla Cake Mix
1 tsp. sugar-free strawberry jam
1/2 Tbs. Sprite Zero
~Mix the ingredients together and pour into a non-stick-sprayed cupcake liner (I tuck my liner into a small ramekin to use instead of a whole cupcake pan). Bake at 325 degrees F for appx 22 min, or until a test stick comes out clean.

    I love Mary’s Gone Crackers! They are so good and such a great low cal snack if you love chips/crackers.

      Oh me too! I loved them! And I love alternative crackers and chips. I love how nutty these taste.

      Yeah knowing how to keep cake mix at exactly the calories it comes with in the box is a pretty dangerous but on knowledge! For a whole cake, one box of mix combined with one CAN of soda is the perfect ratio. Then bake for the time and temp on the box!
