Apple Honey Oat Bran Muffins

I love when inspiration is sent to me right when I need it. My best friend texted me the other day and said “I love honey bran muffins!”

Well, that just sounded too good to pass up. I knew that I wanted to make them gluten free with oat bran instead of wheal bran, sweetened with honey, and I knew that they needed a subtle touch of fruit too…thus, my Apple Honey Oat Bran Muffin was born! Tah-dah!

Apple Honey Oat Bran Muffins
(makes 8 standard muffins)
1 cup oat bran
½ cup flour (I used a gluten-free blend)
2 Tbs. brown sugar
2 Tbs. honey
2 tsp. baking powder
½ tsp. cinnamon
¼ tsp. salt
½ cup + 2 Tbs. unsweetened almond milk
1 egg white
3 Tbs. canola oil
¼ cup dried apple pieces
~Preheat oven to 425 degrees F. Prepare your muffin tin with non-stick spray.
~First, combine all of the dry ingredients in a bowl. Create a well, and add honey, milk, egg, and oil. Stir until just combined. Then, fold in the dried apple pieces.
~Bake 15-18 min or until the test stick comes out clean. Let cool on a wire rack and enjoy!
