Healthy Coconut Almond Granola

August 13, 2012 by Melissa

Remember this Foodie Penpal package I received? Carrie used her favorite recipe from Two Peas and Their Pod to make me a batch of granola, knowing I love to make my own granola too. Since trying the original recipe, I decided to put my own spin on it and make my own Healthy Coconut Almond Granola that is just as addictive and delicious but with a fraction of the calories! Cheers to breakfast!
Healthy Coconut Almond Granola
(makes approximately 15 ¼-cup servings)
2 ½ cups old fashioned oats
½ cup unsweetened coconut flakes*
1/3 cup raw chopped almonds
¼ cup raw pepitas
1 tsp. cinnamon
¼ tsp. salt
3 Tbs. pure maple syrup
2 Tbs. coconut oil, melted
¼ cup unsweetened applesauce
1 tsp. vanilla extract
¼ tsp. coconut extract
*I used a mixture of small and large coconut chips, but use what you have on hand or what you are able to find in stores
~Preheat oven to 300 degrees F. Line a baking sheet with parchment or a silicone mat.
~In a large bowl, combine all of the ingredients. Make sure everything is mixed well. Pour the mixture onto the baking sheet. Bake for 30-40 min, stirring every 10 min until well toasted.
~Let cool completely before storing in a well-sealed container. Eat by the handful, sprinkled over Greek yogurt, or as a small bowl of cereal.
Adapted from Two Peas and Their Pod: Coconut Granola
Makes an adorable gift too!
Strike up a conversation: I promise I’ll write about my birthday weekend! I just have to get my thoughts together. BUT, I did have some awesome gluten-free birthday cupcakes! Now, are you ready to make this granola??

I love making my own granola! One year for Xmas, I made all my friends a little bag of granola.

Your granola looks great. I have been spoiled with homemeade granola since I was a kid (grandma’s recipe) now I won’t eat store made.

Lucky lady! I’d love to hear your gma’s recipe! Sometimes it’s not being spoiled, it’s just having good taste 🙂

hi any idea what the calorie count per serving is?
    thanks!

Hi Sandra! I don’t because I don’t really want to set a specific serving size on the granola (some people love a sprinkle, some love a small cup…). But in the past I’ve plugged all ingredients into Calorie King and calculated it, then divided it by how many servings I’ve decided it will be.
Enjoy! This is one of my favorite granolas!

Yes, honey instead of the maple will work just fine! 🙂
