No-Bake White Chocolate Oatmeal Cookie Bars

The next holiday is Labor Day, right?

And you’ve committed yourself to dessert again, right?

And you’re sick of staying up until 2am baking special shaped cookies and sorting out the specific colors of sprinkles you need, right?

I know you all too well. So, I’m going to help you out a bit! You’re welcome.

Here’s a wonderfully simple no-bake cookie. No-bake cookie? Yes. It tastes baked because of the toasty cereal. Genius? Yes, thank you.

No-Bake White Chocolate Oatmeal Cookie Bars
(makes 36 small bar cookies)
6 oz. white chocolate chips
7 oz. sweetened condensed milk, non-fat
1/2 cup unsweetened coconut
1/2 cup old fashioned oats
1/2 cup crisp rice cereal (I use Gluten-Free Rice Krispies)
1/2 cup toasted oat cereal* (I use Quaker Whole Hearts)

*This adds the “baked” and “toasted” taste to the cookie bars without cooking them!
~Line an 8×8″ square baker with foil or parchment and spray with nonstick spray.
~In a double boiler, melt the white chocolate (if you’re magical and happen to be good at melting white chocolate in the microwave without burning it, then A. good for you; B. do it instead). When the chocolate is melted and smooth, stir in the sweetened condensed milk. Quickly stir in all of the rest of the ingredients. Transfer to the prepared pan and use a spatula to spread out the mixture into an even layer. Let set (I put mine in the fridge) for at least 2 hours before cutting. Enjoy!

    Yum! I wonder if this would work with vegan white chocolate chips. I have some, but they don’t melt as well and they firm back up really quickly.

    Interesting! I’ve never used vegan white chocolate so you’d have to let me know how that turns out! It’s be great with semisweet chocolate too, do if your vegan chocolate melts better than the white then try that!
