No-Bake Oatmeal Chocolate Chip Cookie Bites

This weekend, I went on another trip to hunt for wedding things. My mom and I were staying with a friend of hers and having a wild girls weekend…
 
 You’d day-dream about these too if you’d made them and left them at home… 
 
Wild, as in eating a bowl of ice cream in the evening, seeing a movie in the theater, shopping, and being in bed by 10:30. Woohoo, watch out!
 
I never go stay with someone without bringing treats (that’s just manners, right?), so I brought some GIANT, sinful cookies. I made cookies that I was even embarrassed about giving as a gift because they looked so decadent. To stop myself from eating them, I even made them with all-purpose flour (which I almost never eat).
 
 
Although the cookies looked (and tasted, I hear) amazing, in the back of my mind, I couldn’t get these No-Bake Chocolate Chip Oatmeal Cookie Bites out of my head! I had left them back home in the fridge, and my mind kept wandering to them.
 
They have my favorite ingredients packed within them: chocolate chips, oats, and nut butter. Not overly sweet, and perfectly comforting, you’d never guess you were craving a healthy cookie (because that just sounds crazy!).
 
No-Bake Chocolate Chip Oatmeal Cookie Bites

These no-bake cookie bites are actually a healthy treat! You can eat them as a snack or dessert. (makes 12)

Ingredients
  1. ½ cup natural nut butter (I used a mixture of peanut and almond butters)
  2. 2 Tbs. honey
  3. ¼ tsp. vanilla extract
  4. ¾ cup old fashioned oats
  5. 1 Tbs. ground chia seeds (“milled”)
  6. 2 Tbs. flax seed meal
  7. ¼ cup mini semisweet chocolate chips
Instructions
  1. In a small bowl, combine the nut butter, honey, and vanilla (if you have cold nut butter, then microwave it for about 30 seconds before combining, then make sure the mixture is cooled before continuing to the next step).
  2. In a separate bowl, combine all of the rest of the ingredients. Add the peanut butter mixture and use a wooden spoon to help combine everything. It will seem almost crumbly. Use a cookie scoop to scoop the dough, then transfer the ball to your hands and firmly press everything into a tighter ball.
  3. Set finished Cookie Bites into a storage container with a lid or on a plate and cover with plastic wrap. Refrigerate for at least 20 min to set before serving.
