Pear Five-Spice Coconut Oatmeal

I think there’s a gas leak in my apartment.

That’s all I can come up with to explain this. I mean, seriously, both Steve and myself have been past the point of exhaustion for days…maybe weeks now.

Ever since Sunday when we took the dog to the puppy emergency room for the evening, we haven’t been able to stay awake! Seriously, he went to bed at 7:00 pm last night. Yup, 7:00 pm. And I’ve been up “really late” and barely squeaking by 9:00 pm.

Woah, party monster!

I don’t want to alarm you. Are apartment doesn’t even have gas. But that seems like a viable scapegoat, right?

Speaking of animal hospital, you wouldn’t believe the people that end up there in the middle of the night.

Not to say we’re totally normal…but…

Well, we’re definitely not THOSE people. You know, the ones that stumble in with newborn kittens that bit them, asking if they now have rabies.

Or the “thug life” looking guy sitting in the corner who doesn’t remember his zipcode and is carrying a chihuahua in a pink blanket. Yeah.

Anyways, maybe that’s why we’re still tired. And why eating bowls and bowls of oatmeal is the only thing bringing me comfort.

Like this oatmeal. It’s very comforting. The spices are warm and the coconut and pear make it exotic and Fall-like…it’s really amazing.

Pear Five-Spice Coconut Oatmeal 
1/3 cup old fashioned oats
2/3 cup water
1/4 tsp. Chinese Five Spice
1 Stevia packet
1 Tbs. shredded unsweetened coconut
1/2 ripe pear, diced 

~In a microwave safe bowl, combine the oats, water, and Chinese Five Spice. Stir. Microwave until fully cooked (in my microwave it takes 2:35 on half-power).
~When the oats are fully cooked, stir in the coconut, Stevia, and pear. Enjoy! If you like more spice, sprinkle a bit more over the top!
