Pumpkin Spice Latte Oatmeal

Pumpkin Spice Lattes are super popular this time of year. It’s the first sign of Fall, right?
Well, I love the taste, but I can’t just live in Starbucks, now can I? And the calories are a bit much.
But! There are a bunch of coffee brands that make Pumpkin Spice coffee beans to brew at home! Brilliant, right? Yes, I believe so.
Here’s a perfect way to incorporate your favorite seasonal drink into your breakfast in a major way. You’ve seen me use coffee in my oatmeal in the past, so this was definitely the first thing I had on my mind when I had leftover coffee the other day. Love it!
Plus, it’s healthy! Just had to throw that one in there 🙂
Pumpkin Spice Latte Oatmeal
1/3 cup old fashioned oats
2/3 cup brewed, cooled “pumpkin spice” coffee*
¼ cup pumpkin puree (not pie filling)
1 Stevia packet
¼ tsp. cinnamon
1/8 tsp. nutmeg
1/8 tsp. allspice
*I used Trader Joe’s brand and just reserved some of the coffee from my morning brew to use for my oats. There are several brands that come out with Pumpkin Spice Coffee this time of year, so use your favorite.
~In a microwave safe bowl, combine the oats and coffee. Microwave until the oats are fully cooked (in my microwave, it takes 2:30 on half power).
~In a small separate bowl, combine the pumpkin, Stevia, cinnamon, nutmeg, and allspice. Place the pumpkin mixture into your oatmeal bowl, swirl and mix together, and enjoy! 
By the way, these taste amazing cold too! Just make up your bowl, throw it in the fridge, and when you get up the next morning, pour a bit of your favorite cold milk on top and stir! Yum!
