March 26, 2013 by Melissa

Sandwich cookie kick? I think so. You’re welcome!

CookieButterSandwich3 I know I have sung the praises of cookie butter here before! So I won’t bore you. You can just get to the baking and drooling all on your own.

These are amazing. Like, out of this world, amazing! Oatmeal cookies? Yes!! Perfectly soft and smooshed together with cookie butter. I mean, seriously, it doesn’t get much better than that!

It’s like the ultimate Oatmeal Cream Pie cookie!

Quirk Books has published some killer cookbooks (hello, remember this one…and this one…and this one?), so I’m really honored to be published on their website! Show me some love over there 🙂

I’m (not really) ashamed to admit that I have 4 jars of cookie butter in my pantry (Biscoff creamy, Biscoff crunchy, TJ’s Speculoos creamy, and TJ’s Speculoos Crunchy).

So, I have all of these ‘sample-sized’ Biscoff packets that I should probably get to using. I’ve made puppy chow with it, but maybe I need to get more adventurous…

I’ve never had cookie butter before! I’ve had Biscoff though, and I hear it’s similar. These look amazing! Love your blog 🙂
