Coconut Lime Macaroons

It was SO beautiful this weekend!

I got to wear shorts and I felt so relaxed, just because the sun was out. My mom and I got to spend the whole weekend together, running errands, planning my wedding, and having fun.

What else is there to do when the sun is out? Well, crack out some summery cookies, of course!

Right?

Macaroons are the perfect cookie for the new OXO egg tools! The separater gives you perfect, easy egg whites, and the hand-crank mixer fluffs up whites in no time!!

Well, I did! I combined my latest obsession, lime, with my favorite classic cookie, coconut macaroons. Macaroons are pretty darn amazing too, because they don’t need any butter or oil, just egg whites…and not a ton of sugar either! They’re fluffy, flavorful…just perfect.

Coconut Lime Macaroons

The tropical tastes of coconut and lime come together in this perfect two-bite cookie. They're low in sugar, naturally gluten-free, and perfect for sharing (or hoarding!). (recipe makes 15-18 cookies)

Ingredients
  1. 3 egg whites
  2. ¼ tsp. salt
  3. 2 Tbs. sugar (raw or granulated)
  4. 2 Tbs. granulated Stevia (or more sugar)
  5. 2 ½ cups shredded coconut
  6. ¼ tsp. coconut extract
  7. 2 tsp. lime zest (zest of one large lime)
Instructions
  1. Preheat your oven to 350 degrees F. and line your baking sheet with parchment or a silicone mat.
  2. Combine the egg whites and salt in a mixing bowl. Whisk until frothy. Add the sugar and Stevia, and whisk for 2 minutes, until it starts to thicken.
  3. Fold in the coconut, coconut extract, and lime zest. Stir until completely combined.
  4. Drop 1-1 ½ Tbs. sized mounds onto your cookie sheet (arrange the coconut into a mound with your fingers). Bake the cookies for 18-20 minutes, until golden on the edges and top. Let cool completely on a wire rack before serving. Enjoy!

    Oh ya! Pulling my heart strings. And my daughter doesn’t like coconut, so they are ALL for me. Oh wait, that might not be a good thing if I wanna keep the scale down. LOL.

    Oh I LOVE macaroons, but I have never actually tried to make them! Love the idea of adding lime…it seems so obvious, since coconut and lime are a perfect pair. 🙂

    Ahhh! Gorgeous m’dear! Absolutely GORGEOUS! Shortbread cookies are my fave, but I love me a good macaroon! And they are SO easy to make!! Love it!

    It looks nice but it doesn’t look like a french Macaroon…it doesn’t mean i would’nt not taste it 😉

      That’s because it isn’t 🙂 there’s a big difference between a French or Italian Macaron (one “o”) and a coconut macaroon. Two totally different cookies. But you should definitely try these if you’ve never had a macaroon!
