Strawberry Banana Oatcakes

Wanna make your mamma proud?

Make her breakfast.

I know what you’re thinking. “Oh Melissa. Now I have to figure out a way to make her breakfast pink and appetizing?!”

Sheesh people, stop worrying! I totally have this covered! These pancakes are pink, healthy (yes!), and super flavorful! Seriously! Let’s go ahead and run the gamut, mmmkay? Vegan, gluten-free, full of fiber and vitamins…gosh you must really love your mom!

Strawberry Banana Oatcakes
(makes one portion, 4 Oatcakes)

¼ cup strawberries, hulled

½ large, over-ripe banana

1/3 cup oat flour*

¾ tsp baking powder

¼ tsp. xanthan gum

2 tsp. granulated Stevia

*I grind my own! I pulse old fashioned oats in my mini food processor until extra fine. 

~Using a blender or immersion blender, blend the strawberries and bananas until smooth (it will result in approximately 1/2 cup of blended fruit).

~Add the oat flour, baking powder, xanthan gum and Stevia to the blended fruit. Mix together until completely mixed.

~Heat your skillet, sprayed with nonstick spray, over medium heat. Scoop the batter (a little under ¼ cup) onto the skillet and cook the oatcakes 3-4 minutes on each side (until golden in color).

~Serve and enjoy! These would be lovely drizzled with honey and yogurt, but if you want to keep them vegan, maple syrup or agave would be great too.
