Peanut Butter Iced Latte

I’ve watched “When Harry Met Sally” five times in the last week. No shame. It’s been on TV. And I have a need to turn it on every time I see it in the Guide.

Yes, I own the DVD.

But it’s so much easier to have the TV gods choose it for me.

I love it. I’ve always thought I was way too much like Sally. But I really like that. “On the side” is a big one for me too.

Shouldn’t you be outside? Not watching the same movie everyday?

It’s already over 95 degrees out there. And insanely humid.

So no. Besides, the best part of summer is the excuse to make refreshing drinks. And not get sunburned.

So I made you a Peanut Butter Iced Latte. Yes, peanut butter!

Why is this not a thing?! I’m making it a thing.

Peanut butter doesn’t completely mix into the milk when its all cold, but that makes for wonderful peanut butter bits as you’re slurping it down. Think about it: you love when ribbons of chocolate get sucked into your mocha…but this is peanut butter!

And its so simple. No need for fussy drink recipes here. Just pour and taste, adjust and pour more…make it how you like it! It’s your refreshment after all!

Now you can say “no thank you” to expensive chocolate or vanilla lattes, because they’re not peanut butter, and we all know peanut butter is way better!

I had always fantasized about peanut butter lattes. I even bought peanut butter coffee syrup once, but it was horrible. Just trust me on this one. Not worth it, and it ruins your coffee. Keep it simple, use real peanut butter. You’ll thank me later.

Enjoy! Now, Sally is about to have a moaning fit in public so I have to get back to my movie.

Peanut Butter Iced Latte

Unsweetened almond milk (or milk of choice)

Granulated Stevia

Creamy peanut butter

Cold coffee (put what’s left from your morning brew into the fridge to wait for you to make this) or cold espresso

Ice

~Fill your cup up with ice cubes. Then, add granulated Stevia (I use ¼ – ½ tsp. per coffee drink).

~In a small dish, microwave approximately 2 tsp. of creamy peanut butter for 20 seconds to melt it. Add the melted peanut butter to 1/3 to ½ cup unsweetened almond milk and mix well (I like to combine both in a jar with a tight lid and shake them to mix).

~Pour as much coffee as you’d like in your cup. I like to fill my cup 2/3-full. Then, pour in your peanut butter milk.

~Stir, taste, and adjust depending on how sweet or coffee-like you’d like it to be! Enjoy!

Note: Yes, I dipped the rim in melted peanut butter. Do it, and enjoy licking the cup while you drink!

    Seriously, the big wigs at Starbucks are totally kicking themselves right about now…and you totally had me at the peanut butter-rimmed glasses…holy YUM!!

    And for the record (when I HAD cable) I was the same way with Sweet Home Alabama…can’t even BEGIN to tell you how many times I’ve seen that movie! Lovvvvve it!
