Roasted Trail Mix Bananas

My Roasted Trail Mix Bananas are a speedy, simple recipe that can be made at home, on the grill, or over a campfire. Bananas are stuffed with peanut butter and your favorite trail mix then roasted to perfection, making them sweet, salty, crunchy and creamy! You’ll have so much fun putting these together and more fun eating them.

This recipe is more of a how-to than a recipe, but that just means it’s crazy easy and you’ll be making it before you’re even done reading this! Insta-treats!

Ok, so I was going to call this a “camping recipe” because it reminds me of campers (trail mix, bananas, fire roasted, easy) and can be made over a fire or on a grill, but let’s be honest here, I’m never going camping and I’m making these at home. BUT you could make these while you’re camping…whether that’s in your own bed or in the woods.

I love that this recipe is super simple and makes an amazing dessert, but what it can BECOME is even more amazing. Picture this: roasted banana, stuffed with melty peanut butter and your favorite trail mix, topped with ice cream! That, my friends, is why you can’t go camping…because I’ve heard you can’t bring ice cream.

You can, of course, eat them just as they are. They’re seriously sweet and savory and everything you could ever want. Just use a spoon and eat up! But melty ice cream on top, always a golden idea.

Feel free to use whatever trail mix you like here. I use the tart and sweet mix from Trader Joe’s but I added the new Pecan Pie m&m’s to it, which I can totally recommend as an amazing idea. Not to toot my own horn… TOOT

My Roasted Trail Mix Bananas are a speedy, simple recipe that can be made at home, on the grill, or over a campfire. Bananas are stuffed with peanut butter and your favorite trail mix then roasted to perfection, making them sweet, salty, crunchy and creamy! You'll have so much fun putting these together and more fun eating them.

Ingredients
  1. Bananas
  2. Trail Mix
  3. Peanut Butter
  4. Ice cream, optional (haha)
Instructions
  1. Preheat your oven to 400 degrees. Cut the ends off of your bananas, then cut each banana in half. Use a paring knife to carefully cut a slit down the middle of each, horizontally, but not all the way through the bottom of the peel. Carefully open the banana (like a book). Drop 1 tsp of peanut butter into the banana and spread it around. Then, sprinkle in trail mix until the banana half is overflowing. Repeat with all of the bananas you plan on making.
  2. Wrap each banana in foil, but make sure the foil is easy to unwrap to expose the top of the banana. Bake for 10 minutes completely wrapped, and then 5 more minutes with the top open so the trail mix toasts slightly.
  3. Let the bananas cool slightly before serving! Either serve straight-up with a spoon, or scoop ice cream on top! Enjoy! (Don’t eat the peel…just thought I’d throw that in there.)
