Strawberry Citrus Juice

September 1, 2016 by Melissa

My Strawberry Citrus Juice is my last ditch effort to hold onto summer. The ultimate strawberry lemonade-like drink, but only made of freshly juiced fruits and veggies, this drink will leave you refreshed in the healthiest, sweetest way. This juice has only a handful of ingredients, makes one perfect portion and is ready in moments.

So apparently with the start of September, everyone whips out pumpkin and apples…I apologize because I am not that person this year.

I live in Mississippi and I’m currently wearing a tank top and shorts because it is almost 90 degrees F outside. Sooooo just the sight of a scarf makes me break out into a sweat.

Thus, the reason I’m making juice should need no explanation.

I’m trying to use strawberries in everything while I still can. I love that they’re available year-round, but they truly only taste amazing during summer months, so I’m gobbling and drinking them all up now. SO here’s my recipe for Strawberry Citrus Juice so you can join me.

Can I just say a quick word about juicing, juices, juice, whathaveyou? I’m not a juicing person. You won’t ever find me stumbling around lightheaded, 3 days into a juice cleanse. If you’re one of those people, good on you, I just am not. So, this is not a post to start out some epic string of juice recipes I expect you to subsist off of. We good?

BUT I do love a good juice. Fresh is better. And if you want it green, a few handfuls of spinach are always welcome.

This juice is really simple and it tastes like a summery lemonade, with a bit of a zing. Strawberries and citrus pair so well together, and they get a refreshing, cooling twist from some cucumber. Feeling spa-like yet? Well, I’ve added a knob of ginger to the mix, which gives it a tiny kick and helps nourish your tummy too. Yes, I just said tummy. Mom moment.

You can use whatever kind of apples you like best, but I find that pairing a juicy, sweet apple (like a pink lady or honeycrisp) really helps it all blend together, and doesn’t leave you feeling like you can point out a distinct apple taste. Apples are wonderful when you’re making fresh juices, because they are FULL of liquid (like cucumbers) and they are naturally sweet, which is great because strawberries and citrus fruits can be so acidic.

The great thing about this juice is it is naturally sweet. There’s no sugar or honey and you really don’t need any. If you sip on it and think “woah that is a punch in the fruit-filled punch in the face!” then just add some water to mellow it out. I certainly don’t drink many juices at home and I mostly stick to coffee and water, so juice can sometimes taste too strong for me. Cutting it down with water is my go-to, plus that means you can end up with 2 portions or one bigger portion. Yay water.

I’ll just say a quick word on the juicer I used. This one is a KitchenAid Easy Clean juicer. It is quite compact, in my opinion, and really easy to use. You can adjust the pulp level to your preferences and there are only 2 settings (high, low), so it is so simple. I honestly never wanted a juicer because I hate cleaning them (hashtag lazy), but if you make a couple juices at once, then just immediately clean it, it isn’t so bad. Plus, this one really doesn’t have a lot of parts to mess with, so it isn’t as tedious a task as a previous juicer I used. So there’s that. This isn’t a sponsored post by KitchenAid, just my two cents.

If you don’t have a juicer, you can try using a Vitamix and then straining the juice and pressing it all out of the pulp with cheesecloth or a fine mesh strainer. That works too, but is also pretty messy.

Ingredients
  1. 6 large strawberries
  2. 7” of cucumber
  3. ½” of ginger
  4. ½ lemon
  5. ½ lime
  6. 1 apple (pink lady or honeycrisp)
Instructions
  1. Wash and prepare all of your fruit and veggies (peel the ginger, cut the apple in large chunks, cut the rind off of the lemon and lime). Juice them according to your juicer's settings (high speed for the ginger, apple and cucumber, low speed for the citrus).
  2. Pour your finished juice in a glass, enjoy! If you want to, add water to make your juice more plentiful.
Notes
  1. Keep prepared juice in the fridge in a tightly sealed jar for up to 3 days.
