Spicy Sweet Chex Mix

December 20, 2016 by Melissa

My Spicy Sweet Chex Mix is a super simple snack mix that hits all the right flavor notes. It’s spicy and sweet, salty and rich; it’s crunchy and so addictive too! You’ll want to make a double batch, because after you get done munching on it you’ll want to share it with your guests. This recipe is gluten free.

There’s something about being in my parents’ house around the holidays that makes Chex mix a necessity. Wait, question: what does your family call it? My family calls it “daddy nummy.” Is that just us? Or is that absolutely insane?

Ok where were we?

Chex mix. My mom makes huge batches of the classic. It’s loaded with Worcestershire, hot sauce, garlic…there’s always lots of different cereal in it and, per my dad’s request, no pretzels. And when I’m around, she makes one pan without the wheat Chex. Thanks mom.

I swear I could go all year without ever eating it or even remembering it exists, but the second it’s Christmastime and my parents are involved…Chex mix please.

So I’m sitting here, shoveling handfuls of the crunchy spicy goodness into my gob and thinking “I wish this were sweet too. Like, spicy sweet.”

That, my friends, is my stroke of genius, and the moment my husband dreads. He hates when I turn his classic comforts into revamped treats. Because this inevitably leads to versions that involve sweetness where he wishes there was none. He’s not a savory-sweet kind of dude.

But I am a savory-sweet kind of lady.

So here we are! Spicy Sweet Chex Mix! And honestly, this stuff is so damn easy too. The flavor highlights are cayenne and coconut sugar. And it’s just that simple.

Crunchy cereals and gluten free pretzels make up the base. Then you have your melted butter binding on the spicy cayenne and sweet coconut sugar. A hefty pinch of coarse salt for a good bite…then it’s all tied together with some chocolate chips and craisins for more texture and sweetness. I love it all!

So now I have a new favorite Chex mix. My Spicy Sweet Chex Mix is seriously addictive and dangerous. I mean, it’s mostly cereal so…can I eat it for breakfast? I think yes.

I can’t wait to share this version with my whole family. I know yours will love it too!

Ingredients
  1. 1 cup Cheerios
  2. 2 cups Rice Chex
  3. 2 cups Corn Chex
  4. 1 heaping cup gluten free pretzels
  5. 3 Tbs. melted unsalted butter
  6. 3 Tbs. coconut sugar
  7. ½ tsp. cayenne pepper
  8. ½ tsp. sea salt
  9. ½ cup chocolate chips (I used Ghirardelli bittersweet)
  10. ½ cup low-sugar craisins
Instructions
  1. Line a baking sheet with parchment paper and preheat your oven to 300 degrees F.
  2. Pour each cereal and the pretzels onto your baking sheet. Drizzle the butter over all of the cereal. Then, sprinkle on the coconut sugar, cayenne and the sea salt. Toss with a spoon. Bake for 15 minutes, then stir, then bake for an additional 15 minutes.
  3. Place the baking sheet on a wire cooling rack. Sprinkle on the chocolate chips and the craisins while it is still hot but don’t stir. Also, I like to sprinkle on a tiny bit more cayenne now, but that is up to you (and how much spice you like) but no more than a tiny dusting.
  4. Let the mix fully cool, then pour into a large bowl. Enjoy!
Notes
  1. Keep Spicy Sweet Chex Mix in an airtight container on the counter for a week.

What a fun twist on the sweet chex mix. I def want more savory things right now–I’m too sugared out from all the other treats.
