Berry Swirl Unicorn Smoothie

This Berry Swirl Unicorn Smoothie is actually just an uber healthy smoothie with a magical dose of sprinkles on top. Vibrant berries lend naturally intense taste and colors for this fun twist on the popular trend! We can do unicorn AND be healthy too!

Ok, I jumped in on the unicorn train. But seriously, how could you not love it?!

I’m not a huge fan of a giant drink of neon colors and questionable flavor…but I am a huge fan of something colorful BECAUSE of its flavor and then maybe (ok, definitely) and generous sprinkling of sprinkles on top. You with me?

So that Starbucks drink totally broke the internet, we get it. And for once I wasn’t in line to get it. I’m not really one to jump in line at Starbucks if the drink doesn’t even have coffee in it, so right there I was automatically out. But also, the fun-killer in me was totally bugged by all of that artificial coloring and “magical” whatnot that made the flavor a mystery. I just couldn’t do it. That on top of immediately hearing reviews of people saying it tasted like nothing or tasted too sour…done.

But it made me feel like I was missing out. Like I wasn’t getting my sprinkle dose for the day. So here’s my compromise: the Berry Swirl Unicorn Smoothie.

Can you believe there’s hidden veggies in this thing?! Better believe it!

I steamed and froze cauliflower for the veggie punch. I promise you can’t even tell it is in there. The steaming then freezing makes it blend right in, all creamy and nutritious, and also makes it more easily digested. And this is all to make me feel better, because I can’t help but add a veggie into everything, and spinach would’ve just ruined my color vibe here.

You can make a Berry Swirl Unicorn Smoothie in a snap! Don’t let blending two flavors deter you. Because there are hardly any ingredients and both layers are almost identical, you just toss in all the strawberry layer ingredients, make your bottom layer in your mug, put the rest in a bowl for later, blend the blueberry layer, make that layer, then top it with the reserved strawberry layer. Bada bing.

I had extra smoothie when I was done, actually allowing me to make a blueberry-strawberr-blueberry smoothie too, which I threw in the fridge for later (because I knew my baby boy would slurp that right up).

I think the most important touch here is…SPRINKLES!

Let’s talk sprinkles. I love these ones I used and they’re from Sweetapolita. I ordered several different combos and actually mixed two here. You really can’t go wrong. But if you’re feeling uneasy about them (they’re just a tiny touch of naughty fun, right?) then I also love these naturally colored ones from India Tree. Either way, don’t leave off the sprinkles, or the magic is gone.

I never thought I’d see myself adding sprinkles to a smoothie, but now that I’ve done it once, I’m hooked! This could really take smoothies into dessert territory for me, or just make me feel like its my lucky day all day long. I’m good with both!

Ready to make a Berry Swirl Unicorn Smoothie? Let’s do this!

BERRY SWIRL UNICORN SMOOTHIE
Recipe by Melissa @ Treats With a Twist
Makes 1 smoothie (but there is extra for more or a very large portion)

Ingredients
For the Strawberry Layer:
1 heaping cup frozen strawberries
¼ cup frozen steamed cauliflower*
½ frozen banana
1 cup water or almond milk

For the Blueberry Layer:
½ cup heaping frozen blueberries
½ cup frozen steamed cauliflower
½ frozen banana
¾ cup water or almond milk

Sprinkles (not optional)

Method
Start with the Strawberry Layer, blending all of the ingredients in your high-powered blender until smooth. This will be your bottom and top layer in your cup, so pour the bottom layer (to around half-way up your cup), then place the rest in a bowl and rinse out your blender basin.

Next, blend the blueberry layer. Pour a thick middle layer in your bowl (you will probably have extra, which you can use for another smoothie or just drink later).
Finally, top that middle layer with the reserved strawberry layer. Top the whole thing with a magical dusting of your favorite sprinkles. Cheers!

OPTIONAL: Add more nutrients by blending a vanilla protein powder into each layer, just being careful that your powder stays color-neutral when it is blended (some powders turn green…which will make for a grungy smoothie).

*I cut a large head of cauliflower into large chunks, steamed it until soft, then let it cool. I then froze it in containers for smoothies! Steaming the cauliflower helps it to be blendable and easily digested.

    OK I need to try cauliflower in my smoothies! I have heard of adding it to pudding but haven’t jumped on the train yet. And yes, sprinkles for the WIN! So pretty 🙂
