The Croissant Chronicles: Day 1

November 5, 2009 by Melissa

I've taken on the project of making croissants. French pastry has nothin on me!It's Day 1 and the anxiety quickly dies down as the water hits the yeast, flour is stirred in, and the timer is set for 1 hour...here we go!Ever knead dough for 10 min straight? I know 10 min doesn't sound long...but it is! It's very long when you're arms are asking you to stop.I never realized exactly how much butter … [Read more...]

November 4, 2009 by Melissa

Ever smell fresh espresso and think: "Wish I could eat up that smell..."? Problem solved! These not only taste good but they make you're home smell like heaven. And the Seven Minute Espresso Frosting is the gooey goodness I've been searching for my whole life...sighThese cupcakes turned out perfectly. The frosting...I had to tweak it from Martha's. Pumpkin Swirl Brownies

November 1, 2009 by Melissa

I love the combination of pumpkin and chocolate! For example, with the pumpkin bread I made the other night, I turned it into bread pudding, made with milk, sugar, eggs, and chocolate chips! Yummmmm. Here's a super easy recipe for pumpkin swirl brownies. I was inspired by Martha's much more complicated recipe. Basically use your favorite brownie mix and follow the directions on the box and add a … [Read more...]

Week Four: Oreo Cheesecakes

October 28, 2009 by Melissa

Or as I like to call them...Great Value brand chocolate sandwich cookie cheesecakes! So instead of a whole sandwich cookie in the bottom of the paper liner, I separated the "oreos" and used one of the cookies for the bottom "crust". I crumbled the oreos into big chunks and stirred them into the batter for a chunky cookie cheesecake. It made 27 mini cheesecakes! And a great thing about these (as … [Read more...]

Week Three: One-Bowl Chocolate Cupcakes

October 25, 2009 by Melissa

This week, I'm making chocolate cupcakes and am decorating them for a pumpkin-carving party. I used the recipe on page 152 for the chocolate cupcakes. This was a mess! The batter was so runny after the 3/4 cup warm water was added and it flung wet batter everywhere! AND I'm realizing how bothersome it is to rotate the cupcakes 1/2 way through the cooking time! Two cupcake pans side-by-side makes … [Read more...]

It’s-Almost-Week-Three Apple Pie

October 24, 2009 by Melissa

Well, you can't expect me to wait all week to bake again! I decided to make mini apple pies in small ceramic dishes. I made pie dough for the first time! Note about pie crust dough: make sure your well of flour is deep enough to hold the water before you pour it in! Yes, I made a messy mistake. Let's just say, there was gluey water all over the counter. BUT it all turned out so yummy. I just … [Read more...]

Week Two: Streusel Cupcakes

October 18, 2009 by Melissa

First of all, Happy National Chocolate Cupcake Day. I LOVE chocolate cupcakes, don't get me wrong, but I am protesting this holiday this year. I love the irony of the fact that my love of chocolate cupcakes runs deep, but this day is my ex's birthday. So, I'll make the chocolate cupcakes another day. Moving on...Struesel Cupcakes! Page 63 of Martha's cupcake cookbook. First of all, I decided to … [Read more...]
