Vegan Spiced Pear Muffin for one

Happy Halloween!! Here’s a healthy way to start out your sugary day!
I love making single-serving desserts because I know that it forces self-control. No matter how good the end result is, once it’s gone, it’s gone! Gluttony just got served 🙂 If you eat breakfast with a mate, though, feel free to double the recipe.
I know that the special ingredient of the season is pumpkin, but let’s not forget about all the other fall flavors that make this season so wonderful. To me, that means pears! I love pears, but always tend to forget about them until fall rolls around…then I can’t get enough of them.

Vibrant red pear! 

To kick off this recipe, start by coring a pear, sprinkling it with cinnamon, allspice, and sweetener (I use Splenda), then wrap it up in foil and bake it in the oven at 350 degrees F for about 20 min. This starts softening the pear and infuses it with warm pie-like flavors. Mmmm…
Now, you’ll only use a tiny bit of your baked pear for this muffin, so feel free to eat the rest later as dessert. Yup, I just gave you breakfast and dessert in one-fowl-swoop! You’re welcome 🙂

Vegan Spiced Pear Muffin, for one
2 Tbs. whole wheat flour + 1 Tbs. white flour (or 3 Tbs of your flour of choice)
1/4 tsp baking powder
pinch of salt
1 Tbs. vanilla soy yogurt (I used WholeSoy)*
1/2 tsp. almond butter (or peanut butter, but almond works best in this recipe)
1 Tbs. + 1 tsp. unsweetened almond milk (or “milk” of your choice)
1/2 Tbs. sweetener (I use Splenda, or 5 drops vanilla stevia)
1-2 Tbs. small diced baked pear (which I made in the paragraph above!)

~Preheat oven to 375 degrees F
~Mix all the ingredients in a small bowl until well incorporated. Put batter into a muffin baking cup (instead of baking one muffin in a muffin pan with the rest empty, I used a small ramekin to hold the paper baking cup and bake just one serving!) and bake for 15-20 min. Enjoy!

*I just recently was given the blessing of an opportunity to try WholeSoy soy yogurt.

The vanilla tastes, to me, like a cross between vanilla pudding and graham crackers! Mmm so good. It bakes well into this recipe because vanilla and pears go so well together. Ordinarily, though, I would recommend baking with plain flavored yogurt…and luckily WholeSoy makes and unsweetened plain version which is perfect for baking!
