Baked Banana Oatmeal

Here’s yet another way to prepare your morning oatmeal! It’s baked in ramekins, so it resembles a morning cake. If you don’t have the time in the morning (which is why I love my cold oats recipes so much), then make your baked oatmeal the night before, refrigerate it, and the next morning re-heat it in the microwave!

Baked Banana Oatmeal
1/2 ripe banana (I keep a bunch in my freezer, so I just cut one in half for this recipe)
1/4 cup rolled oats
1/4 cup yogurt (or almond milk)
1/4 cup water
1/2 tsp. cinnamon
1/2 packet (or 1/2 Tbs) Splenda 

~Preheat oven to 375 degrees F. First microwave your banana for about 2 min to start to caramelize it and intensify the flavors. Combine all ingredients and pour into a non-stick spray-coated ramekin. Bake for 30 min or until your baked oatmeal has a browned top and is set.

~Serve sprinkled with cinnamon and Splenda! Optional: a bit of peanut butter or butter alternative would melt right in and just add so much more to the flavor! Yum.

    Thank you for sharing. This was an easy and great recipe. Worked great for me as a quick and healthy dessert. I added dates and a tbs of honey since I don’t use artificial sweetners. The banana makes it more than sweet enough. I also topped it with a little dried coonut. This had a texture very similar to good bread pudding.
