Apple Pie Overnight Oats

What a comforting yet refreshing way to start the morning: pie! No, not really (though yes, I’d really love pie for breakfast). My apple pie overnight oats have all of the flavor of apple pie, the slightly tender yet crisp apple chunks, and all of the nutrition of whole grain oats and protein-packed yogurt. Totally awesome if you ask me!

I love the cupcake mug my grandma found for me! 
Apple Pie Overnight Oats
1/4 cup old fashioned oats
1/2 cup water
1 tsp. vanilla extract
1 tsp. cinnamon
1 tsp. Splenda (or Stevia)
1/3 cup apple chunks (appx 1/2 an apple, cubed)
1/4 cup non-fat plain Greek yogurt

~In a microwave-safe container, combine all of the ingredients except for the yogurt. Microwave on medium heat for 1 minute 30 seconds, partially cooking the oats and slightly softening the apples. Then, stir in the yogurt. Cover with a lid or plastic wrap and put in the refrigerator overnight. In the morning, unwrap it, give it a stir, and enjoy!

    I really, really wish our Whole Foods would start selling the So Delicious vegan Greek yogurt!
