Skinny Peruvian Lucuma Milkshake

I love an interesting, new ingredient. I was sent Lucuma powder, and I immediately started doing some research on it. As a powder, it can be used as a sweetener. The powder comes from a South American fruit which tastes similar to an apple, and in regions such as Peru, it is the most popular ice cream flavor. It is considered the vanilla of Peru! 

So, I have decided to honor the ingredient and make it into one of my milkshakes! It has a very mild and refreshing taste, perfect for you vanilla lovers who need a little something different. Plus, although it is a sweetener, it has a low glycemic index, so it’s great for you diabetics to try out too!

Skinny Peruvian Lucuma Milkshake

¾ cup frozen unsweetened almond milk (6 cubes)*
¾ cup unsweetened almond milk
2 tsp. Splenda
2 tsp. Lucuma powder**
¼ tsp. vanilla extract
*for tips on freezing almond milk, please read this
**you can find Lucuma powder at your Whole Foods Market, or order it straight from the Navitas Naturals website
~Put all of the ingredients into a powerful blender, and blend until smooth. Enjoy!
Note: if you like a stronger Lucuma flavor, add ½-1 tsp. more of the powder and blend until incorporated
