Drunken Date and Honey Oat Cake

I made this cake and had to wrap it up and tuck it in the fridge to keep myself from eating the whole thing. It is one of those cakes that is all fruit and barely any batter, and it tastes like a toasty oat bran muffin, sweet with honey, and a punch from the drunken dates and raisins. If you don’t like raisins, feel free to use all dates, but the golden raisins add a slightly different sweetness to the mix.

It truly is a perfect breakfast cake, but I bet it’d be delish with a scoop of vanilla ice cream and a drizzle of honey after a light and fresh dinner.

Drunken Date and Honey Oat Cake

(makes one 9” loaf cake)
1 cup oat flour*
1 ½ tsp. baking powder
¼ cup Splenda (or Stevia)
¼ cup honey**
½ tsp. salt
½ tsp. vanilla
¼ tsp. cinnamon
2 Tbs. unsweetened almond milk
½ cup golden raisins
1 ½ dup chopped dates
2 Tbs. bourbon
2 Tbs. water

*make your own by pulsing oats in a food processor until fine
**to make the cake vegan, substitute agave nectar. It will alter the taste, but if you like agave, then you’ll be just fine 🙂 

~Prep: In a bowl, combine the raisins, chopped dates, bourbon and water. Set aside for at least 30 min and up to overnight.
~Preheat oven to 350 degrees F and spray a loaf pan with nonstick spray.
~In a large bowl, combine all of the ingredients. When they are well mixed (it may appear like a slightly dry batter0, add the bowl of bourbon-soaked fruits and stir until combined. Pour into your loaf pan and use a spatula to smooth the top. Bake for 25-30 min until golden brown and a test stick comes out clean. Let cool on a wire rack and serve while it is slightly warm.

    I made this cake this week and it is insaaaane!! I unfortunately didn’t have bourbon and had to sub water but still…way good!
