Mocha Frappé Overnight Oats

June 27, 2012 by Melissa

I’ve been making a lot of oatmeal lately, all with interesting flavors, hot and cold. It’s probably my favorite food for the time being. So, when I decided to mix my favorite food with my favorite obsession (coffee!), a new summer “iced mocha” was born…in my breakfast bowl.
Ready for your morning oats and your morning jolt all in one healthy bowl? Here’s the perfect 1-2 punch that will make you feel like you’re indulging for breakfast (chocolate and creamy coffee!), with zero guilt! Just trust me on this one…if you like French Silk Pie and Mocha mouse dishes, then this one’s for you.
Mocha Frappé Overnight Oats
¼ cup old fashioned oats
¼ cup unsweetened almond milk
¼ cup non-fat plain Greek yogurt

½ tsp. instant espresso powder*
2 tsp. unsweetened cocoa powder (I use Scharffen Berger)
2 tsp. Splenda (or Stevia)
~Stir together all of the ingredients in a bowl. Put the bowl in the fridge, uncovered, overnight (or for at least a few hours). In the morning, give it one more stir, then eat up!
*If you’re an “extra shot” kind of person, you can up this to 1 tsp. But be warned, the flavor is really strong after it sits overnight.

I think I can certainly find time in my day for one of those. Looks so darned delicious!

Any reason why it’s uncovered? I normally put mine in an airtight kilner (mason) jar
