Spice Cake Oats (The Broccoli Hut guest post!)

Hi everyone! My name is Caroline, and I blog over at The Broccoli Hut. As a dietitian-to-be and foodie extraordinaire, I enjoy creating delicious recipes with a bit of healthfulness added in—which is why I was delighted to be asked to write a guest post here on Treats with a Twist!
The recipe I’d like to share with you today was inspired by one of my favorite childhood desserts. When I was a kid, I requested the same dessert every year for my birthday, much like my peers. However, my choice was a tad out of the ordinary in that it was not the ever-trendy cookie cake or the traditional chocolate cake. Rather, I consistently requested spice cake with my mom’s special maple frosting. Something about the mélange of spices combined with maple syrup made for a memorable treat that I still enjoy today.
As much as I would like to eat this cake for breakfast, its high sugar and fat contents make it -best reserved for my birthday only. However, to tide be over between birthdays, I decided to make the next best thing—Spice Cake Oats, complete with creamy “frosting.”
Oatmeal and oat bran are both excellent sources of fiber and protein; oat bran in particular is recommended for cholesterol reduction. So this is one “treat” that really is nutritious!
Spice Cake Oats
Serves 1
Ingredients
·       40g (1/3 cup) oat bran
·       1 cup + 1 tablespoon unsweetened almond milk
·       1 small banana, mashed
·       ¼ teaspoon ground ginger
·       ¼ teaspoon ground cloves
·       ¼ teaspoon ground nutmeg
·       ½ teaspoon ground cinnamon
·       1 teaspoon pure vanilla extract, divided
·       1 tablespoon coconut butter*
·       1 teaspoon pure maple syrup
Method

1. Combine oat bran, 1 cup of the almond milk, and spices in a small saucepan over medium heat.
2. Meanwhile, heat banana in the microwave for 30 seconds.
3. Add banana and ½ teaspoon of the vanilla. Stir continuously as the liquid absorbs, ensuring that the banana disintegrates into the oat bran.
4. Meanwhile, combine remaining vanilla, coconut butter, maple syrup, and remaining almond milk. If the coconut butter is solid, heat briefly to loosen it. Whisk until the mixture reaches a thin icing consistency.
3. When the mixture has reached your desired thickness, pour into serving bowl and top with a dash of cinnamon and coconut mixture.



Notes
*If you can’t find Artisana coconut butter, you can substitute 1 tablespoon of light cream cheese to create a similar frosting-like effect.
