Peanut Butter Pot de Crème (Eggless)

I was recently reading an article about healthy pies…they didn’t look that healthy to me. And the slices were petty high in calories. I think they just added berries to the top of conventional pies and called them healthy.

One of the recipes was for a peanut butter pie, though, and that looked pretty darn good to me. To solve the calorie problem, I basically transformed the recipe entirely. With magical chia seeds instead of eggs and no crust, I have created fiance-approved silky Peanut Butter Pot de Crèmes! Fabulous!

Peanut Butter Pot de Crème (Eggless)
(makes 8 individual pots)
¼ cup ground chia
½ cup water
1 tsp. vanilla extract
1 ¼ cup fat-free evaporated milk
½ cup natural, reduced-fat creamy peanut butter
¼ cup brown sugar

~Preheat oven to 400 degrees F. Set eight small ramekins in a deep baking pan.

~In the bottom of a mixing bowl, combine the chia, water, and vanilla. Set aside to sit for 10 min.
~Meanwhile, in a heavy saucepan over medium heat, combine the milk, peanut butter, and brown sugar. Whisk continuously until the ingredients are well combined and the mixture begins to release steam.
~Pour the mixture into the ramekins. Pour water into the pan around the ramekins to create a water bath and prevent the pots from scorching. Place the entire baking pan into the oven and bake for 20-25 min or until the crèmes are set around the edges and slightly jiggle in the middle.
~Remove from the oven and let cool for at least 30 min before putting each ramekin in the refrigerator. Refrigerate for at least 2 hours before serving. Enjoy!

    Does anyone know how to grind the chia seeds? I bought some at TJ’s but don’t know what to do with them. This recipes sounds perfect!!

    Well the ones I used were already ground. BUT you can use a spotlessly clean coffee grinder or a very good blender/food processor will work too!
