Orange Spiced Belgian Waffles with Fresh Stone Fruit Sauce

I’m so excited about today’s breakfast recipe! I recently was sent* a brand new KitchenAid 5 Speed Hand Blender to try out in my kitchen. And, man oh man, this thing is awesome!!

Good morning sunshine…

I have a regular immersion blender that I’ve always loved, but it only has one blade attachment, which limits its uses (granted, it is hot pink…). This new blender comes with a whole case full of attachments!

The new KitchenAid 5 Speed Hand Blender! 

I can hardly wait to start trying them all out in my everyday recipes. It has a frother blade that froths and mixes for perfect coffee drinks or cake batter; a shred blade for meat and ice; a blade perfect for smoothies, shakes, and frosting, a whisk, a chopper cup…YAY!!!

The possibilities are endless! I already love the handiness of throwing on a blade and blending right in the pot I’ve got cooking on the stove (I’ve used it to blend tomato sauce AND jams!).
When I saw the whisk attachment and the chop cup attachment, I immediately thought of waffles (strange how we get inspired, right?)! I have a beautiful Belgian waffle iron that my fiancé gave me a couple years ago and I almost never get to use it (have you ever cleaned a waffle iron? Right.), so I was really excited to come up with a fall breakfast recipe and use my new toyand my waffle iron!!

Orange Spiced Belgian Waffles with Fresh Stone Fruit Sauce
(makes 10 waffles)
Orange Spiced Belgian Waffles
2 ½ cups unbleached all purpose flour
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 Tbs. raw or granulated sugar (I used raw)
½ tsp. cinnamon
¼ tsp. allspice
¼ tsp. nutmeg
zest of one orange
juice from ½ an orange (2-3 Tbs.)
4 egg whites
2 egg yolks
½ cup nonfat plain Greek yogurt
1 ½ cups unsweetened almond milk (or milk of your choice)
~First, start your Stone Fruit Sauce (below), so it’ll be ready at the same time the waffles are done!
~In a large glass bowl, combine the egg whites and the salt. Mix with the whisk attachment (speed 4) of your hand blender until you achieve stiff peaks (about 2 min).
~In a separate large mixing bowl, combine all of the dry ingredients. Make a well in the center of the ingredients and add the milk, orange zest and juice, yogurt, and egg yolks. Stir from the center outwards until the ingredients are just incorporated. The batter will seem very thick.
~Add half of the whipped egg whites to your batter and fold them in carefully. Then add that entire bowl of batter to the rest of the egg whites and continue to fold and mix until the whites are completely incorporated into the now fluffy batter.
~Heat your waffle iron (this is allowing the batter to set too!), sprayed with nonstick spray, until it is ready. Follow your waffle iron’s fill and duration instructions to cook the waffles (mine requires 2 cups of batter and times it all on its own). Continue to make the waffles until all of the batter is gone (if you don’t have eager faces waiting as they come off the iron, place them in a warm oven on a sheet tray or oven-safe plate until they are all ready to serve).
~Top with your Stone Fruit Sauce and enjoy!
~To store extra waffles, wrap each waffle in plastic wrap individually. Freeze or refrigerate until you’re ready to eat them. Pop them into your toaster just like you would any frozen waffle!
…whisk the egg whites until stiff peaks form…
Stone Fruit Sauce
2 red plums
1 large peach
zest and juice of ½ an orange
~Chop up the fruit into chunks. Place the fruit and the orange zest and juice into a deep saucepan over medium-low heat. Cover with the lid and let cook down for 20-30 min, stirring occasionally. Turn down the heat if it is cooking too quickly to prevent burning.
~Let the sauce cool slightly, then pour it into the chop cup attachment of the mixer. Pulse and blend until the sauce is smooth! Set aside until the waffles are ready to be dressed!
~Keep any extras (if there are any) in the fridge in a sealed container for up to a week.
…cook the fruit for 25-30 min on med-low heat…
…pour the cooked fruit into the chop cup attachment…
…attach the blender handle and pulse until the fruit is pureed…
