White Chocolate Peanut Butter Fudge

First thing’s first. I want to announce that the winner of my Cookin’ Crunk vegan cookbook giveaway is…drumroll please…Shannon!! I’ve emailed you and you need to get back to me within the next 24 hours to claim it!


Now, remember my new little love: Peanut Butter Co? Well, I’ve decided to make a batch of super simple but extremely rich fudge with it!
The great thing about this fudge is that it is very rich. The flavor slaps you in the face! So, you can cut it into small squares, take your share, and then distribute it amongst your friends (favorite friends first, you know how it goes).
Please read all of the directions first before you start (like your grandma always told you) because it asks you to work quickly, and you want to be prepared!
White Chocolate Peanut Butter Fudge
(makes 64 squares)
8 ounces white chocolate
7 ounces fat-free sweetened condensed milk, divided
¼ cup peanut butter*
*I used Peanut Butter Co.’s Maple Peanut Butter!
~Prepare an 8×8” pan (or 9×9”) with a piece of foil and spray with nonstick spray.
~In a double-boiler, place all of the white chocolate chips, and stir until they start to melt. Meanwhile…
~In a separate bowl, combine the peanut butter and half of the sweetened-condensed milk (eyeball this one). Wait to do this until your white chocolate is just about melted because you don’t want this “peanut butter fudge” to seize before you can use it!
~Pour the other half of the sweetened condensed milk into the now melted white chocolate chips and stir. Now…
~Work quickly, and spread the white chocolate portion into the bottom of the pan using a silicone spatula. Then, on top, dollop and spread the peanut butter portion. Use your spatula to firmly press and smooth the top. Let set in the fridge for 2 hours before cutting!  Enjoy!
