S’mores Krispie Treats

Um, seriously?! Where did July go?!

Please don’t let the summer be over!!!

Let the summer get just to my birthday…and then can it please go backwards for a bit because I forgot to enjoy some of it. My birthday is in two weeks, by the way…just in case you were wondering how much longer you have to search for that perfect present for me. August 11th to be specific.

I’ll make it easy on you, though. Because I’m really nice. Just shoot me an email and I’ll send you the list. It’s mostly a list of places that I want gift cards to, but there are a few items on there too.

Anyways, back to me whining about summer. Well, I’ve made homemade ice cream, bought a ton of blueberries and peaches, worn a swim suit by the pool…there’s not much left but to make s’mores!

But s’mores have totally been done, time and time again (by me!). So, I need something fresh and new.

Cue the music…

S’mores Krispie Treats to the rescue!

Are you totally dying over these? I was! And they’re SO ohhhhmaaaagaaahhhh amazing!

You get all the ooey gooey fabulousness of a Krispie Treat, but totally taken to another level with toasted marshmallows, extra tiny marshmallows, graham (as if Teddy Grahams weren’t cute enough, I found mini ones!), and milk chocolate (because we’re keeping true to the original flavor we all love).

I made mine SUPER thick by using an 8×8” pan, which I highly recommend, but if you like thinner treats, I totally understand (well, I don’t really understand but you can do what you want). However thick or thin you make them, you’ll totally roll on the floor in pure bliss after you eat these.

Hopefully they make summer last just a little bit longer. Just the thought of needing to put on a sweatshirt makes me want to cry.

S’mores Krispie Treats
(makes one 8×8” or 9×13” pan, depending on desired thickness)

1 bag (10oz) standard marshmallows

3 Tbs. butter, melted

5 cups puffed rice cereal

½ cup “Mallow Bits” (tiny marshmallows, like in hot chocolate packets)

1 cup mini Teddy Grahams (or regular Teddy Grahams)

2/3 cup milk chocolate chips

~Prepare an 8×8” deep baking dish or a 9×13” baking dish with foil or parchment and nonstick spray, with some of the foil/parchment overhanging so the treats will be easy to remove.

~In a large bowl, combine the cereal, Mallow Bits, Teddy Grahams and chocolate chips. Stir to combine.

~Line a cookie sheet with foil or parchment and spray with nonstick spray. Spread the marshmallows in an even layer on the prepared cookie sheet. Broil the marshmallows in the oven until dark and toasty (keep a close eye on them the whole time so they don’t completely burn!)

~Use a silicone spatula to push the toasted marshmallows off the cookie sheet into the mixing bowl with the cereal and other ingredients. Drizzle the melted butter on top and start stirring. Carefully fold the marshmallows into the cereal mixture until it looks completely combined.

~Pour the entire mixture into your prepared baking dish. Spray your hands or a silicone spatula with nonstick spray and press firmly on the treat mixture until it’s pressed and even in the pan. Let the S’mores Krispie Treats set for 30 minutes before cutting with a very sharp knife and serving. Enjoy!

    Oh my gosh, there is such a thing as MINI TEDDY GRAHAM’S?!? Mind=blown, level of cuteness=overloaded! 😉

    I love love love these! And for the first time EVER, I have to say I’m actually enjoying summer…you know, since it’s not been as hot as bloody HELL outside! Fingers crossed this month doesn’t end up being a scorcher!
